Well, canım means honey, my life, etc. But this word functions in another way also in which it doesn't imply such. It's difficult to explain its usage. It's like words "oh", "well" etc. (not in meaning but in function)
So, yes you can see men say "canım" to other men but not in the way it is used to darlings. An example might be;
Hayır canım daha neler? (Ahaha don't ask me for a translation)
Hmm, so without adopting this usage, I'd recommend you not to use it to a guy :D

Older people can call younger people "canım" If you're a youngster sitting in a restaurant to eat lunch, the waiter/waitress can appear asking:
Ne istersin canım? (What would you have?)
It has nothing with being a darling in this example.
But remember it would be odd to call an older person "canım" . You can offend people

Yes, Turkish people like to say canım, hayatım(my life), tatlım(my sweety), kuzum(my lamb), iki gözüm(my two eyes)!!!, ciÄerim(my liver)!!!
I like to say "Åekerim"(my candy) to my girl or boy friends.
