try a piece of bacon we use to use saltpork but it's hard to find these days. Just dip it in when it starts coming up

Buy a wok or a fry-daddy. A wok has high sides that the grease shouldn't be able to get over. A Fry-daddy is a fully enclosed fryer and would be your best option. It would really cut down on the smell of grease in the kitchen too.

I cook chicken all the time I use a cast iron dutch oven and use peanut oil its the best for frying. also if using a pan only put the oil in to cover chicken half way cook one side till golden brown then flip and repeat

The above answers are good...less oil or a deeper pan, and make sure the temp is correct. But, most of all...pat dry any water from the meat. Water makes the oil bubble more.
