Here are some of my favorite cookies...they all come out perfect and chewy whenever I have made them...hope you enjoy-
Double Chocolate Cookies
1 1/4 cups butter or margarine, softened
2 cups sugar
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
3/4 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
2 cups semi-sweet chocolate chips (12 oz. pkg.)
Heat oven to 350°.
In large mixer bowl; cream butter and sugar until light and fluffy.
Add eggs and vanilla; beat well.
Combine flour, cocoa, baking soda and salt; gradually blend into creamed mixture. Stir in chocolate chips.
Drop by teaspoonfuls onto ungreased cookie sheet. Bake 8-9 minutes. (Do not overbake; cookies will be soft. They will puff while baking and flatten while cooling.).
Cool slightly; remove from cookie sheet onto wire rack. Cool completely.
Good Old Fashioned Chewy Chocolate Chip Cookies
1 cup margarine
1 1/2 cups brown sugar, packed
2 eggs
1 teaspoon vanilla
2 cups flour
1/4 cup cornstarch
1/2 teaspoon salt
1 teaspoon baking soda
2 cups chocolate chips (or chunks)
Preheat oven to 350F degrees.
In a large bowl, cream margarine and brown sugar together.
Beat in eggs one at a time.
Add vanilla.
Sift dry ingredients together.
Add to wet mixture.
Stir in chocolate chips.
Do not overmix!!
Drop onto a greased cookie sheet (or roll into balls if you prefer).
Bake for 10 to 12 minutes (DO NOT go over 12 minutes- they will become harder!).
And lastly...my all time favorites...Cranberry Oatmeal Cookies
6 3/4 ounces all-purpose flour (1 1/2 c.)
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 1/2 cups old fashioned oats
8 ounces unsalted butter, slightly softened
1 cup packed light brown sugar
1/2 cup granulated sugar
2 large eggs, beaten lightly
1 tablespoon honey
2 teaspoons pure vanilla extract
6 ounces dried cranberries (1 1/3 c.)
5 ounces chopped pecans (about 1 c.)
Oven to 350 degrees F.
(if baking right away).
Line sheet pans with parchment.
Mix the dry ingredients together, then stir in the oats.
Set aside.
Beat the butter and both sugars together until light and fluffy.
Add the eggs, then scrape down the bowl; add the honey and vanilla and beat until blended.
Add the flour mixture in two additions, beating each until well combined.
Stir in the cranberries and pecans.
At this point, you can either bake, or freeze.
To freeze, just scrape the dough onto plastic wrap, roll into a log, wrap tightly, and freeze until ready to bake.
Then just take them out of the freezer, let sit for about 15 minutes, then slice into 3/16" thick slices and bake as directed.
To bake immediately: drop by tablespoonfuls about 2 inches apart on parchment lined sheet pans.
Bake until the centers of the cookies are soft and no longer look wet; about 9-11 minutes.
Let cool on the pan for 5 minutes, then transfer to a rack to cool.

Here is how to make yummy cookies:
Ingredients: 1.5 cups (180 gm) flour
1 egg
225 gm (1 cup) butter
1/2 cup powdered sugar
1 tsp vanilla essence
1200 W Microwave
Method: Cream flour, egg, butter, sugar and vanilla together.
Mix in the flour to make a smooth dough.
Form into 24 small balls and flatten with a fork.
Place 6 at a time on a microwave baking tray or lightly greased greaseproof paper and cook at 100% for 1 1/2 -2 1/4 minutes, depending on the size of the cookies. Give the tray a half turn halfway through the cooking time.
Allow to cool on a wire rack. Repeat with the remaining mixture. Switch on the grill also according to your oven's manual.

Well the big key to a good cookie is real butter, and not to over bake, I hate a crunchy cookie! If your cookies are cakey, you may be using too much flour, if they are crunchy you are overbaking. I actually hate cookies from the supermarket, thay are not too hard to make at home and homemade are 100 times better!
Microwave? Really?
