I live in southern spain, and there is not much in the way of any imported foods. The stuff we do get tends to be super expensive..I love to cook, and would be happy to make things like naan bread and flour tortillas, but can't find a good recipe. HELP!

Traditionally naan is made in a tandoor which is a cylindrical clay oven. But at home you could cook the naan using a hot griddle instead. Here's the recipe that I always use for making naans and it turns out quite well.

FYI, if naan is cooked on a hot bbq pit it takes on a much better flavour than that cooked on a griddle.

Ingredients
3 cups self-raising flour (maida)
1 tbsp oil
2 tbsp butter
1/2 cup yogurt
salt to taste
1/2 tsp baking soda (soda - bicarb)
warm milk for kneading.


Sieve together dry ingredients into a large rimmed plate. Add butter, yogurt, oil and crumble with fingers. When dough is like course crumbs, add milk a little at a time, till a soft pliable dough is formed. Cover with wet muslin cloth. Cover with another plate and keep aside for 5 - 6 hours.

Knead dough lightly. Break off a piece, the size of a medium potato and roll into a thick triangle, using dry dough if required.

Place on a pre-warmed griddle (tawa). Apply water on the top part with hands Invert naan and stick to griddle. Invert griddle and roast over the gas flame direct (or nothing like toasting over bar-b-que coals). Serve hot with a blob of butter on it.

I made this on Christmas eve - it's the best naan bread that I've ever had at home. It's amazingly fluffy, chewy and totally delicious. Naan bread - makes four large naans Ingredients: 250g (2 cups) of all purpose flour 6g (1 sachet) of dried yeast 1 tsp sugar 1/2 tsp salt 57g (4 tbsp) melted butter 25g (1.5-2 tbsp) plain yoghurt 150ml (2/3 cup) warm water 1 tbsp sesame seeds or other topping of your choice (I used chopped cilantro). Method: 1. Mix the water, sugar, salt and yeast together in a jug. 2. Then add 1/2 of the melted butter and the yoghurt to the jug. 3. Place the flour in a bowl of a stand mixer. Drizzle the yeast mix and blend until it comes together. Then knead with a dough hook for 5-7 minutes. 4. Allow to rise in a fridge overnight OR 1-2 hours in a warm place. 5. Punch the dough down and divide into 4 equal pieces. Flatten each one with your hands into a naan shaped bread, brush with butter and top with your choice of topping. 6. Heat and brush a frying pan with butter and wipe with a kitchen paper. Place the naan in the pan and wait for it to evenly puff up (about 3-4 minutes). 7. Dab 5-6 spots of the naan with the melted butter, then turn. Cook for a further 2-3 minutes or until the butter spots have browned. 8. Transfer to a kitchen towel and keep warm. Serve hot, brushed with more melted butter.

1¼ hours 1 hour prep
INGREDIENTS:
500 g wheat flour
1 tablespoon sugar
1 tablespoon baking powder
1 teaspoon baking soda
2 teaspoons salt
2 eggs
60 g yogurt
1/2 cup milk
1 1/2 tablespoons oil
Mix flour, baking soda + powder,sugar and salt in a large bowl.
Add eggs, yogurt, milk and oil, and mix it well with a fork until it makes a firm dough. If it gets to dry add some warm water.
Knead the dough until it gets smooth and elastic, takes about five minutes.
Make it into a bawl and wrap it in some plastic foil.
Put it in the refrigerator and let it sit for about 30 minutes.
Cut the dough into 12 pieces and roll the pieces into rolls
Pat the rolls flat, about 10 cm diameter.
Warm a large frying pan to medium heat.
Put as many nan- breads as the pan can take into the frying pan.
Bake until they are brown spotted on both sides.
Put the breads over on a plate and serve.
