I have a theory. If the more muscles I build for martial arts and kickboxing then the faster I am also losing some weight will help with speed ? How do I actually generate speed and power ?

Speed training is complex. If it weren´t then there would not be University degrees over this sort of topic nor would there be world domination by certain countries´ sports program.

That being said you will have to use Plyometric, maximal strength and velocity training. If you don´t know what these are--then you are going to have to find a professional who does (and many don´t--they will babble the things that you have already read).

Again free info is not what a pro is going to give you--so get yourself to a pro if you are serious about the results you want to obtain.

I've actually heard that stretching gives you increased speed, because it loosens your muscles istead of striking with stiiff arms. Makes sense. In my experience, weight training helps with power, but not speed. Calisthenics, bodyweight excersizes are debatably even better, and explosive movement excersizes will help in speed as well. Bag work and mitt drills are going to increase your stiking speed the most effectively.

Then there's technique involved, but that's a whole other story.
