Tricky one. If you want to freeze and not have them turn to mush on thawing, you really need to snap freeze them.

When they freeze slowly the water molecules inside the vegies form large crystals that puncture the cells of the vegetables. These then leak when they thaw. Fast freezing creates smaller crystals and are not as damaging. A home freezer is not capable of snap freezing.

For long term presevation it might be worth getting hold of a dehydrator. This alone will give an extended shelf life (as long as they are kept in an airtight container).

wrap it all up in celofane. Gladlock can do it and then put it in a zip lock freezer back, but trust me - it won't last long and if it gets freeze burn it will never taste the same...

Get one of those FoodSaver vacuum sealers, they work great, and your food doesn't get freeze burn. You can get them at Bed Bath & Beyond.
