It all depends, how do you know him? if it's some one who you know from work or school you can try to run into him while at lunch and start talking about the food, for example, if he's eating pasta, you can say "Hm mm that smells good! where did you get it?" and he'll respond, and then you can continue talking about Italian food, or restaurants etc. for a little bit, this is a very neutral subject, and if the food is the subject of conversation then it doesn't seem forward or like you are throwing yourself at him. If you see him at a certain place say, a restaurant, you can mention next time "I saw you at {so and so restaurant} how did you like it?" try to seem casual, not like you are stalking him. LOL!! good luck!

start out by saying HI HOW ARE YOU? How is your day? Then start going from there. Make an effort to say this when you see him and he will notice you more.
As far as simple conversations go-- just start out by saying something about the weather is or if you know any of his interests then talk about them.... ask HOW WAS YOUR WEEKEND or what are his plans for the weekend.......then it will all roll from there.

Most people like to express their opinion. Ask him what his thoughts are on a certain subject you know he's interested in and that you know something about so you two can talk about it w/ him.
