That's an easy one. He didn't fulfill ANY prophecies.
Example: The bible does not talk of being born of a virgin, but rather of a young woman. One needs to know a bit of Hebrew to recognize the intentional mistranslation of the word "alma."

Because he in fact fulfilled "prophecies' made up by Paul after the fact.. and did jack squat that involved prophecies that Jews had before, except possibly a twisted version of a prophecy already fulfilled by another, that had nothing to do with the messiah..

Because he didn't fulfill the OT prophecies. He didn't get rid of Rome, he didn't build certain buildings, and he didn't establish a free hebrew kingdom...among other things. He died well before anything like that could happen.
His followers came up with the idea of a "return" where he would finish the job on the second go-round. The Jewish Messiah, however, was supposed to have done it all in one go without a need for a return trip.

Jesus fulfilled the Law perfectly in every detail. The reason the Jews missed it is because by the time Christ came for the sacrifice they had added well over 600 and something laws to it that muddled the "picture." Even Jesus said this. He confronted several of these "extra" laws - one was the temple offering. If someone came and offered a gift and cursed the alter it was nothing but if they cursed the gold of the altar that was terrible. There was something about cursing your mother and father - that was okay even though the Law said it wasn't as long as you brought your gift or some such - can't remember the details. Anyway Jesus said "You've made the Law of no effect with your traditions." THAT is why they missed recognizing Him.

Like everyone else, not just Jews, who is not righteous their ability to reason is clouded by evil after the Fall of man. That said, the first Christians were Jews.
As a people God chose the Jews so that His majesty and glory would be made manifest to the rest of the world. But, like all other peoples, they (the Jewish people) are held to the same standards that God holds all peoples to.

Because they had dozens of messiahs to pick from and none fit the bill but the lottery sort of speak did pick Jesus who has been exaggerated and augmented for all to believe and as the perfect
offering to appease and control the masses with his legend and not his boring real life. seek the truth and ye shall find ....
seek miracles and salvation through superstition and the truth will belong to the skeptic alone.

Many Jews do not even study the Messianic prophecies or the Tanakh,and they've just been told,all their life,that 'Jews don't believe in Jesus'.Some of them view Jesus as a gentile God.
There are now quite a few Jews who believe Jesus is the Messiah.

If you read the new testament, you will see that the religious leaders of the day had their own agenda when it came to Jesus. There were a group of them standing around when He rose Lazarus from the dead! Did they believe then? No. They feared for their "position" to be usurped by Jesus...and they plotted his death.
Remember, many of the Jews of that day did follow Jesus. But many others, out of their own stubborness, ambition and jealousy, would not believe even what they saw with their own eyes.
In Romans, it says that because of their rejection of the "capstone" (Jesus), God blinded them to the truth of their own Messiah. That is why now, so many do not believe. But God will deal with them again one day.
