don't add any sugar to your chocolate. it'll ruin your chocolate and make it grainy. You can however just increase the amount of sugar in your recipe. simple as that.

If it's already soleid, like a bar, just melt it down. Take the weight of chocolate you have, say 8 oz.. If you have 8 oz. of bittersweet chocolate at 50% cocoa, then add 1/4 the weight of the bar (2 Oz). All in all, just try to get about 40% cocoa give or take to make semisweet chocolate. You might have to do the math, but it's worth it.

Confection sugar is made just for bakers. orks every time but you might have to ad a lot so go to a bakery for the good stuff.
