I commend you for the effort of 'made from scratch', however, you can have the same result with a few shortcuts.
Crock Pots recipes are quick and easy -
stew meat
onion
carrots
potatoes
1 can of cream of mushroom soup
1 cup of water
salt and pepper, garlic powder
Put it all in the crock pot and let it cook throughout the day

Also, a 'homemade' chicken pot pie has always been a favorite at my house.
chicken breast
onion
potatoes - cubed
carrots
broccoli (you can used sweet peas if you prefer)
cream of chicken soup
1 store bought pie crust
brown the chicken in a little conola oil or PAM spray- set aside
in the same pan, add vegetables until they're ALMOST done. Mix together with a can of cream of chicken soup and add to pie pan. Put 2nd crust on top... to make it look 'homemade' simply take the time to crimp the edges of the pie crust. Don't forget to make slits or use a cookie cutter to cutout vents.

Starry_eyed_peach is right, the crock pot is great. You get a home cooked meal, but you are not frazzled at dinnertime, you can actually enjoy his company.
Taco Beef
1 roast
1 pack taco seasoning, or your own seasonings
Cook on low 8-10 hours. About half way through, you can add salsa, I like Pace because they don't add sugar. The meat will start to fall apart, you can shred it with a fork. It is really good with salad and cornbread, or you can serve it like tacos, with soft tortillas or crunchy ones.
Another favorite with my family is Spaghetti Carbonara. Easy and good.
Set your pasta to boil. Get 2 eggs, some cream, and parmesan cheese. Beat the eggs, add about 1/2 cup cream and some parmesan, mix it up well. When you drain your pasta, leave the pasta in the hot pot, but take it off the heat, and pour in the egg mixture right away. Stir the eggs into the pasta thoroughly. The residual heat from the pasta and the pot will cook the eggs and cream, and you will have a very creamy sauce all over your pasta. Add more parmesan if you like, but it's good just as it. This is also good with cooked bacon crumbled in. It goes well with a salad and nice crusty bread.

this is oh so easy and oh so good...everyone I make it for loves it. it's a Paula Deen recipe
Prep Time: 20 minutes
Cook Time: 3 hours
1 (5-pound) pork butt roast
2 tablespoons salt
1 tablespoon black pepper
1 tablespoon garlic powder
2 tablespoons seasoned salt
4 tablespoons liquid smoke, found in grocery store
1 medium onion, sliced
1 cup water
3 bay leaves
Preheat oven to 350 degrees F.
Sprinkle 1 side of the roast with half the salt, pepper and garlic powder. Flip the roast over and rub the remaining 2 tablespoons. Repeat the process with the seasoned salt and liquid smoke. Place the roast in a large roasting pan. Add the onion, water and bay leaves to the roast. Place in the oven and cook for 2 1/2 to 3 hours, or until thermometer reads 170 degrees F. Let meat cool for a few minutes and then slice.
Serve with corn on the cob or potatoes or rice. You can make BBQ sandwiches with the leftovers.

Do you have a cook book? When I was first married I didn't know how to cook. We both learned together. I guess I could answer better if I knew what you both liked. BTW good for you trying to branch out. Those helper things have too much sodium. Also every time you taste something homemade that is delicious ask the cook for the recipe. Most are very flattered.

cooking is very easy, and if you cook with love the meal will be the best he ever tasted. You can start the day off with pancakes, really simple to make, toss in some blueberries, chopped/sliced bananas and apples, and you are completely set.
Lunch = sandwhich = crusty sub with turkey, mustard and cheese, toasted in a toaster oven till the cheese drips over the side - simple, delicious, and i am always happy to get it
dinner = pick up a cookbook haha - you can make anything, if you make a pasta its easy to fry up some shrimp in light olive oil and sprinkle some garlic (real chopped garlic, its like 1.99 it comes in a small glass jar), mash over the angel hair spaghetti. Vodka sauce is extremely easy to make - as well as spicing up some ragu - toss in some oregano and parmesean cheese when heating up the sauce, and you will have a great simple meal that is impressive. Dont forget the garlic bread (crusty sub, cut in half, with butter and garlic on top, toasted, throw on some cheese and you have something immaculate)
you can do anything, just do it with love, look him in the eye and make him know its all his all the time.

All I cook is homemade, but it would be nice to know what kind of meals you like.
Some ideas: Meatloaf
I don't measure my ingredients but it goes something like this:
1-1/2 lbs ground beef
1 egg
half pack Ritz crackers crushed
1 med. chopped onion
1 tsp garlic powder
3 dashes Worcestershire sauce
1 cup ketchup divided
Mix 1st six ingredients and 1/2 cup ketchup. Top meatloaf with remaining ketchup. Bake at 375 for 1 to 1 1/2 hours depending on how well done you like it.
These potatoes are awesome. My husband loves them.
Potato Bake
8 servings mashed potatoes (homemade or instant is fine with this recipe)
8 oz cream cheese (room temperature)
1 small finely chopped onion
2 eggs
2 Tbs flour
Salt and Pepper to taste
Beat ingredients until well mixed. Bake uncovered 45-60 minutes at 325. Bake until lightly browned and set.
Green Beans and Cheese
Microwave greenbeans on high for about 10minutes until desired doneness. Drain liquid. Slice a couple pieces of velveeta and let melt over green beans.
Layered Toffee Cake
2 c. whipping cream (cool whip is fine too)
1/2 c. caramel ice cream topping
1/2 vanilla
1 prepared angel food cake 16oz
9 heath candy bars, chopped
Mix whipping cream and caramel topping and vanilla. Cut cake into three layers. Place the bottom layer on a serving plate. Spread with 1 cup cream mixture and sprinkle with 1/2 cup candy bar mixture. Repeat layers and ingredients until gone.
Super yummy and easy dessert.

Country Fried Steak
INGREDIENTS
4 (4 ounce) cube steaks
1/2 teaspoon salt, divided
1 3/4 teaspoons ground black pepper, divided
1 cup all-purpose flour
2 eggs, lightly beaten
1/4 cup lard
1 cup milk
DIRECTIONS
Season meat with 1/4 teaspoon of the salt and 1/4 teaspoon of the pepper; set aside. In a shallow dish, mix flour with 1 teaspoon of the pepper. Dredge each steak in flour. Dip in beaten egg, then dredge in flour again.
Heat lard in a large, heavy skillet over medium-high heat. Fry steaks 3 to 4 minutes on each side, or until golden brown. Drain on paper towels.
Pour off all but 2 tablespoons of the fat. Sprinkle 2 tablespoons of the dredging flour into oil. Cook over medium heat for 1 minute, scraping up any browned bits from the bottom of skillet. Gradually whisk in milk. Cook, stirring frequently, 3 to 4 minutes, or until thickened and bubbly. Add 1/4 teaspoon salt, and 1/4 to 1/2 teaspoons pepper; gravy should be quite peppery.
Homemade Mashed Potatos
INGREDIENTS
6 medium russet potatoes, peeled and cubed
1/2 cup warm milk
1/4 cup butter or margarine
3/4 teaspoon salt
Dash pepper
DIRECTIONS
Place potatoes in a saucepan and cover with water. Cover and bring to a boil; cook for 20-25 minutes or until very tender. Drain well. Add milk, butter, salt and pepper; mash until light and fluffy.
Corn on the Cob

Husk and remove silk from ears of corn. Place in a
large pot and add just enough water to cover. Heat

Put half of the apples in a greased 9“x9” pan. Blend together remaining
ingredients, except juice, and crumble half the flour mixture over the
apples. Cover with remaining apples and flour mixture. Pour juice over
top.
Bake 35 minutes.
Great with vanilla ice cream.

Meatloaf... 2 Lb of "good" ground beef...1 Lb of ground pork.
finely chopp'd (1) med onion... finely chopp'd (1) bell pepper, 3 or 4 raw eggs...some flavored bread-crumbs to give it "bulk" and some ...yep, I mean it... V8 juice... just a cup full... in a Big mixing bown... mix it all up with your hands... "squish, squish, squish"... it should be firm... in a loaf-pan... put in the "squish" and pat it all down hard... now squish it together and make a loaf outta it... cover...bake 350dgs... it'll make juice you can make gravy with... 90 min... watch it... and Ummmm good
and you can get as creative as you want... mushrooms, jalapenos, peppers, all that stuff....bacon... let creativity make your meat loaf wonderful... served it with mash'd potatoes and gravy...and a veg....

In the superstore, fruits are usually selected far too soon. Some are rocks, many are bad. Some of the fresh vegetables are typical right (zucchini, onions, garlic, lettuce, greens, and a few others) so I'd have to go with vegetables.

spagetti bolongnase - making your own sauce with tinned tomatoes tomato paste and veggies
any kind of stirfry using soy based sauces soy, garlic oyster and a dash of wistorshire sauce is a nice one
also you can not go wrong with marinated chicken breast in honey and soy sauce with a baked potato and some steamed veggies.
Quiche - if you are feeling inventive
cassaroles and soups are easy
