you could be allergic to wheat products. you might have something call celiac sprue, check it out.

White foods like cereal, bread, pasta, chips are junk. They cause a spike in your blood sugar, which causes a spike in your insulin production; then you eat more junk (piece of bread, cracker) and start the cycle all over.
You need to eat whole grain breads, cereals, carbs, which will take your body more time to digest and which will help avoid those spikes in blood sugar.
When you feel lethargic or if you can't sleep, don't eat junk like white carbs. Have a glass of 1% milk and a couple graham crackers with peanut butter; or a piece of cheese and a whole wheat cracker or piece of apple.
Include fresh fruits, whole grains, veggies, protein and some healthy fats (nuts, fatty fish) in your diet. Stay away from all those simple carbohydrates, as you have experienced what they can do to your body and brain.

You may have a condition called hypoglycemia, nothing to worry about, but needs to be taken care of. If you have a family physician talk to him.
Meanwhile, try to eat more complex carbs, instead of simple ones, because they will break down slowly and won't give you the insulin rush (which removes all sugar from the blood, leaving you feeling lethargic and sleepy, if not completely "woozy" sometimes).
Complex carbs come from vegetables, whole grain, nuts etc.. A quick cure for when you fell lethargic would be a tuna sandwich with whole wheat Bread.
Avoid all simple carbs, like crackers, cookies, pasta, all candy, etc...

Of course, any guesses on this site are just guesses....
Normally, carbohydrates give a person energy and make them feel "zippier" rather than sleepy.
I know someone who was diagnosed with Type II diabetes, though, and he said when his sugar was very high he felt the way you describe.
People with Type II diabetes can have no symptoms, but if the sugar level gets really, really, high that could make the difference between no symptoms and feeling bad. I'm wondering if you could have high blood sugar, and by eating carbohydrates you get your blood sugar level up even higher and to the point where you feel bad.
If, by any chance, you have extra weight there would be even more likelihood you could have high blood sugar levels.
If, by any chance, high blood sugar levels are your problem (and to the point where you feel that bad) it could be potentially dangerous. You should get checked out.
Note: When a person has low blood sugar he/she gets shaky and weak-feeling and may start to sweat. Eating carbohydrates stops that awful weak feeling and makes them feel ok again. In other words, with low blood sugar eating carbohydrates makes you feel good, not bad.

for one thing these carbs are very filling and will often make you sleepy. i recommend that you cutting them in half . you should also make sure your eating the proper serving size, look on the box. i also recommend that you half a piece of fruit or a lean protein with these carbs, this will help slow the absorption down. the bottom line is that your eating to much carbs and you need to cut down and spread it out through out the day, like every three hours, combine a carb, protien, and a good fat, this my dear is the proper way of eating and will not make you sleepy.
