What brands of sauce and mozzarella do professional pizzeria's use?

Trying to make homemade but professional tasting pizzas.

Pizzerias usually use a canned whole tomato called Alto Cuccina Brand. which they put through a food mill. The trick is they don't cook the tomato from the can they use it as is, that is where the fresh taste comes from. And any pizzeria worth its name uses Grande brand mozzrella which is bought in blocks and shredded in batches.

most pizza chains use the chain's own recipe or canned sauce.

The little "hole in the wall" pizzarias use assorted brands or make thier own on site.

The key to making a professional quality pizza is the crust, not the sauce brand or the cheese.

I sometimes use Ragu spaghetti/pasta sauce (any variety you like) when I don't feel like cooking up my own.

Kraft Mozzarella is dependable... but get the Pizza blend fresh cheese, not the straight grated mozzarella. straight mozzrella tastes wrong. The other cheeses they have in the blend make a difference.

every pizza place i have ever worked in had their own sauce or made their own from scratch. as far as the cheese, some used straight mozzarella, others useed a blend of mozzarella and provolone with a bit of parmesan mixed in.

i work for a pizza place i chicago and we made are own sauce crushed tomatoes....italian spice blend some sugar garlic.....thats really about it for cheese go to store and buy the mozzarella that says real mozz its usaully in a log form still not shredded

You'd be better off to make your own sauce. Google up "copycat pizza sauce recipes", you'll get tons of good recipes. Find one that you like and make it your own.

you can buy the sauce in any flavor that you want , the cheese can be mixed flavors or just plain moz,then you can add any topping that you want
