Sweet Potato, Ginger, and Orange Puree

Serves 6 (makes 5 1/2 cups)

4 large sweet potatoes (about 3 pounds)
2 juice oranges
2-inch piece fresh ginger

Scrub potatoes, but do not peel. Place in pot with cold water to cover. Bring to a full boil, then lower heat to medium. Cook for 50 minutes, or until potatoes are very soft.

Meanwhile, grate rind of 1 orange on fine holes of box grater so that you have 1 teaspoon grated zest. Cut oranges in half and squeeze 2/3 cup juice. Set aside.

Drain potatoes in colander and peel under cool running water. Cut into large chunks and place in bowl of food processor.

Using a small sharp knife, peel ginger and mince. You should have almost 1/4 cup.

Add grated orange zest, orange juice, and minced ginger to food processor with potatoes. Process until very smooth. Transfer mixture to saucepan and add salt to taste. Do not add pepper, as the ginger provides enough heat. Reheat gently before serving.

1/4 lb Hamburger
Frozen "brocolli Normandy mix" (big handful or so)
1 medium Potato.
(seasoning to taste.. I usually sprinkle some salt in.)

preheat oven to 350 (or prepare campfire)

peel and cut the potato into appx 1/2 inch cubes.

Lay out a largish rectangle of aluminum foil.

Drop the potato and veggies in the middle of the foil.
Crumble the hamberger over the veggies

fold the foil to seal everythng up in a pouch.

If using the oven set the foil bag in a pie pan and put that in the oven. If using campfire drop in on the coals.

Cook for appx 30 min. Turn the bag over. cook another 20 to 30 min.

Transfer bag to a plate. Open and eat.

Pizza Bagels! quick, easy and most importantly..GOOD!
This can be only 3 ingredients but you can also add pepperoni, peppers, mushrooms..etc.

1 plain bagel, split
1/4 cup pizza sauce
1/2 cup shredded mozzarella cheese
Place bagel on a baking sheet. Spread with pizza sauce. Top with cheese. Bake at 400 degrees F for 12-14 minutes or until cheese is melted.

Yes a scone reciepe: 4 cups of self raising flour, 1 cup of heavy cream, 1 can of seven up or sprite. Mix together with the end of a knife till mixed. Place on a ungreased cooky sheet and bake at 150 degreese for aprrox 12 minutes. Cool on a wire tray.

Flourless Peanut Butter Cookies:

1 Cup Peanut Butter
1 Cup Sugar
1 Egg

Cream all ingredients 'til fluffy, scoop small balls onto baking tray, press flat with fork, bake at 325 F for about 8 minutes. Be very careful not to overbake, you want them soft or they taste awful.

Ridiculously easy fudge: melt 1 bag (12 oz) chocolate (or whatever flavor you want) chips in a pot on the stove over low heat, stir in a can of sweetened condensed milk, make sure the mixture is well combined, stir in 1 tsp. vanilla extract, pour into a foil-lined pan and refrigerate for an hour or two.

Chicken Salsa bake..

Chicken breast cut into square pieces.. Cover with chunky salsa. Bake on 375 for 35 minutes. Take chicken out cover with shredded cheddar cheese and put back into oven for 8 minutes.

you can make chicken and stuffing.
its 4 boneless skinless chicken breasts (uncooked), one box of stuffing, and one can of cream of chicken soup.
place the chicken in a casserole dish
mix cream of shicken with 8oz. of sour cream (or milk if you hvent got the sour cream)
(you can make this recipe light with light sour cream and healthy request cream of chicken)
pour over chicken
melt one tablespoon of butter and pour it over the stuffing, then add enough hot water to saturate the stuffing.
spoon on top of chicken mixture
bake at 350F for 40 minutes or until chicken is cooked
this is a super easy recipe, its quick to throw together and my family loves it!
