California Grilled Chicken

Chicken breast tenders are marinated in a flavorful mixture of pureed nectarine, toasted walnuts, honey, and spices, then grilled.Ingredients:
• 1/2 cup (California) walnuts
• 1 to 1 1/2 lbs of chicken breasts/tenders
• 1 large ripe fresh (California) nectarine
• 1/4 cup honey
• 1/2 cup light brown sugar
• 3 Tablespoons lemon juice
• 1/2 teaspoon cinnamon
• 1/4 teaspoon ginger
Method:
Place walnuts in skillet. Over low heat, toast walnuts about 3-5 minutes until fragrant. Remove for heat and let cool. Then place the toasted walnuts in food processor or blender until finely chopped. Cut nectarine in half and remove seed. Cut up fruit; place in blender or processor and liquefy. Pour pureed fruit into a large saucepan. Add honey, brown sugar, lemon juice, cinnamon and ginger. Cook on low heat for 8-12 minutes until thickened. Stir nonstop once comes to a boil. Remove from heat and let cool. Rinse chicken and pat dry with paper towels. Once the sauce mixture is cooled place the chicken in a large zip-locking bag. Add mixture and toasted walnuts. Remove most of the air from the bag and make sure all the chicken is covered with the sauce. Refrigerate 1-2 hours before removing from marinade and grilling. Discard marinade. Then grill until done, being careful to avoid burning.

Grilled Tuscan Chicken Sandwiches

A great hot sandwich with flavorful grilled chicken, savory vegys and provolone cheese.Ingredients:
• 4 boneless, skinless, chicken breasts
• 1/2 cup zesty Italian dressing
• 1 teaspoon salt
• 1 teaspoon pepper
• 2 Tablespoons olive oil
• 1 red pepper cut in thin strips
• 1 green pepper cut in thin strips
• 1 1/2 cups fresh sliced mushrooms
• 1 red onion cut in thin slices
• 1 teaspoon minced garlic
• 8 slices provolone cheese
• Mayonnaise to spread (optional)
• Italian dressing to drizzle
• Lettuce
• 8 sub buns or 2 loaves specialty bread
Method:
Place chicken breasts in large Ziploc bag and cover with zesty italian dressing. Marinate in the refrigerator at least 4 hours turning the bag over occasionally to coat all of the chicken. Preheat gas/charcoal grill or a ridged grill pan to a medium-high heat. Remove the chicken from the bag and season with salt and pepper. Place chicken on grill and cook until meat is done (center 180 degrees), about 9-10 minutes per side. In a large skillet, on the stove or the side burner of grill, heat the olive oil and add the red and green peppers, mushrooms and onions. Saute about 6-7 minutes. Add the garlic during the last 2 minutes. When chicken is done remove to a plate and let rest for a few minutes. Cut the chicken into strips and arrange on the buns or bread. Top with the vegetables. Drizzle with a small amount of Italian dressing and top with cheese. Add mayo to the top of bread if desired. Wrap sandwiches in aluminum foil and set back on grill for about 2 minutes until bread is warm and cheese is melted. May add lettuce if desired. Place sandwiches on serving tray and skewer with party toothpicks. If using a loaf of bread, cut into equal pieces, add toothpicks and arrange on serving platter.


Grilled Honey Mustard Chicken

Skinless & boneless chicken breast halves are marinated in a mixture of mayonnaise, Dijon-style mustard, and honey before grilling.Ingredients:
• 4 skinless, boneless chicken breast halves
• 1 cup Salad dressing or mayonnaise
• 1/4 cup Dijon-style mustard
• 1/4 cup honey
• 1/2 teaspoon salt
• 1/2 teaspoon pepper
Method:
In a bowl mix salad dressing, mustard, honey, salt and pepper. In a ziplock bag place chicken and pour honey mustard over chicken, reserving 1/2 cup. Let marinate at least 2 hours, overnight is even better. Removed chicken and discard the marinade. Grill chicken about 10 minutes each side. The last few minutes brush with reserved honey mustard.

It all depends on if you have bone-in or boneless. If you have bone in chicken grill with indirect heat to grill and smoke slowly then add sacue at the end. If boneless, grill right over the coals and brush with your favorite sauce turning every time you brush the sauce on. Happy grilling!!!! Oh BTW.....let your chicken rest for 10 minutes after its off the grill to let the juices redistribute through the meat.

Marinate it in Italian dressing about 30 minutes. Drain off the excess dressing, and place on the grill. It can be an outdoors grill, or an indoor grill. Cook until done. Enjoy.

put it on the grill and five-ten minutes before done marinate with bbq sauce

try marinating it with ranch dressing my kids love it add more ranch when grilling yum!
