Easy Fluffy Mashed Potatoes
Use baking potatoes, or Russets, for best texture. Scroll down the page for more mashed potato recipes.
2 1/2 pounds Russet, or baking potatoes, cut into 1-inch chunks, about 8 cups of cut up potatoes
1/4 cup milk or half-and-half, or more to taste
1/4 cup butter
3/4 teaspoon salt, or to taste
1/4 teaspoon freshly ground black pepper
Place potatoes in a 4-quart saucepan or Dutch oven; bring to a boil over medium heat. Reduce heat to low, cover, and simmer for 20 minutes, or until potatoes are tender.
Drain potatoes thoroughly. For the smoothest potatoes, you can put the potatoes through a ricer at this point. Transfer to a large bowl. Add remaining ingredients to the bowl. With an electric hand-held mixer, beat potato mixture until light and creamy.
Mashed potato recipe serves 4 to 6.

I like all potatoes, but Maris Piper are really nice (sorry, don't know where you're from, but in England we have them) ( I guess any potato will do).

Depending on what you like, either peel the potatoes or not. If not peeling, scrub under hot water to clean them off.
Put in a pot suitable for the amount you need to cook. (Depends on how many people....I go by the judgement of two 4" potatoes per person as a side dish)
Cut up potatoes into sections, doesn't have to be even or anything, it's just to make them cook faster.
Throw them in the pot, boil for 30 mins (possibly longer, depending on your type of potato) check for doneness by sticking a fork into the largest piece of potato in the pot, it should pretty much fall apart when you pierce it. Remove from the heat, drain in a colander. Put the potatoes back in the pot on the stove but on the lowest heat. Add a couple of tablespoons of butter, get out your potato masher, and mash away. Add a splash of cream, keep mashing, then add some garlic, not too much (I use the kind in a jar), dill (jar),ground coriander (jar), chives (yep, jar), a bit of fresh ground pepper (haha, I know NOT jar!!) and some salt. Turn off the burner now.
If you want to be REALLY posh, mound the potatoes on the dish, grate some cheese on top, melt/brown under the broiler then snip up some fresh chives and lay them over the top in a pattern.

This is my favorite:

Yukon Gold Potatoes
Roasted Garlic
REAL Butter
REAL Cream
Salt & Pepper

Boil the potatoes until tender.
Cut the top (pointy end) ofo of a whole garlice head, Drizzle with oil and roast in a 350 degree oven for about 15 minutes.
When it is cool enough to handle, just squeeze and the soft garlic will ooze out. Add to your potatoes.
Using a potato masher (or a fork) mash the potatoes, garlic, and butter. Add just enough real cream to make it creamy but not too liquidy. Add salt & pepper to taste.

If you are worried about the garlic, You can skip that step, but do everything else and they will still come out great.

Wash potatoes
Put on a large pot of water.
Boil potatoes until tender check them with a cooks fork,if the fork goes through them without any trouble they are done.
Drain the water.
In a large mixing bowl mash the potatoes with a fork...easier to use a mixer! Beat until consistency is a bit lumpy. Add some milk maybe 1/4 Cup to 1/2 Cup. Add some butter.
Mix until almost smooth but a bit lumpy.
Add some Garlic Powder, and Cheese of your choice.
Sprinkle Parsley ontop
ENJOY!!!

I use a combo of red and Yukon potatoes and leave the skins on. While they're boiling I melt about 6 Tbsp of butter with a good heaping Tbsp of minced garlic. When the potatoes are done, drain and mash with a hand blender that's not turned on. Add 8 oz. softened cream cheese and beat on a low speed until still slightly chunky, then add the garlic butter and finish beating until as lump free as you want.

I LOVE mashed potatoes this way.

The best mashed potato I have eaten was the one my mom had made. She boiled some water, pealed some potatoes, and dropped them in. Wait about 20min(I think):(. Then take thongs and pull them out and then mash it.Don't forget the butter, cream, and anything that you like!

Boil peeled potatoes in salted water till fork tender, drain thoroughly, mash with potato masher (will be slightly lumpy) add 2 Tbsp. butter, some undiluted canned milk, stir, then beat with electric hand mixer only till smooth, season to taste with salt,
pepper is optional. If dry, add more milk and stir.
