Leave it in a cold place. It will crystalise and set.
Conversely, if you want to make it runny put it - lid off, but replaced to prevent water getting into the jar - in a saucepan of hot water for a while and it should return to runny.
Or, if you have time, put it in the airing cupboard, or on a radiator.

You cannot set it yourself. It happens naturally. If you leave a jar of runny honey untouched for a certain amount of time, it sets. It happens faster when you refrigerate it. You have to heat it to make it runny again. The very high proportion of sugar that it contains causes it to crystallise. It is a bit like wax which goes hard in cold temperatures and melts in the heat (wax is also made by bees).

Yes I agree - leave it alone and it will 'set' itself. BUT - beware, if you heat it to make it runny again, you'll destroy a lot of the goodness.
