I had already let it cool off because it looked done on the outside (nice dark brown and crunchy), but when I sliced it open, half of the inside was still raw!! What's the best way to finish baking it without burning the outside, or is it a lost cause?

I have already tried microwaving it for 15 minutes on high, and it's still raw.

darn--------- the only thing i can think of would be to fry it in a skillet instead of tossing it it will be grilled warm and yummy______like a grilled english muffin alot of fancy restaurants grill there desserts

I"m sorry, but you'll just have to toss it out to the birds. Zucchini bread (like banana bread) can be very deceiving. The outside tends to get really brown before the inside is even done. The best way to prevent this is to cook it at the proper temp for the correct amount of time. Insert a toothpick into the center of the bread, if it comes out clean then the bread is done. If not, keep it in a bit longer and keep checking it with a clean toothpick.

slice it into slices and cover the cooked part with foil and place in the broiler for 2 minutes hopefully it works

put it back in the oven for a couple minutes.
