I was eating mushrooms the other day and was thinking if there was anything benefical coming from them.

Mushrooms have been used for thousands of years both as food and for medicinal purposes. They are often classified as a vegetable or a herb, but they are actually fungi.
Mushrooms contain about 80 to 90 percent water, and are very low in calories (only 100 cal/oz). They have very little sodium and fat, and 8 to 10 percent of the dry weight is fiber. Hence, they are an ideal food for persons following a weight management program or a diet for hypertensives.
Mushrooms are an excellent source of potassium, a mineral that helps lower elevated blood pressure and reduces the risk of stroke.
One serving of mushrooms also provides about 20 to 40 percent of the daily value of copper, a mineral that has cardioprotective properties.
Mushrooms are a rich source of riboflavin, niacin, and selenium. Selenium is an antioxidant that works with vitamin E to protect cells from the damaging effects of free radicals.

I eat them because they lower blood presure. Mushrooms are great in Spaghetti!


Spaghetti with Mushrooms, Garlic, Lime & Chilli
400g dried spaghetti
1/3 cup extra-virgin olive oil
4 garlic cloves, crushed
3 small red chillies, finely chopped
2 spring onions, thinly sliced
600g button mushrooms, thinly sliced
3 limes, rind finely grated and juiced
salt and ground black pepper to taste
Cook the spaghetti in a large saucepan of salted boiling water for 9-10 minutes or until al dente.
Meanwhile, heat the oil in large frying pan over medium heat. Add the garlic and chillies and cook, stirring constantly, for 30 seconds or until aromatic. Add the spring onions and mushrooms and cook, stirring occasionally, for 4-5 minutes or until the mushrooms are tender.
Drain the spaghetti and return the spaghetti to the saucepan. Add the mushroom mixture and lime rind and juice. Toss gently over medium heat until well combined. Season with salt and pepper and serve immediately.
Preparation: 15 minutes
Cooking: 12 minutes
Serves: 4



Note: To reduce the chilli heat in this dish, deseed the chillies. Much of the hotness is contained in the chilli seeds and inner membranes.

Cister is right. Have you ever bought the whole button mushrooms and steamed them with asparagus? Just add a little butter (not margarine) and lemon pepper and you have a dish fit for a king. Very good and filling.

Without going into details,yes,mushrooms are good for you,healthy to eat,provide you with vitamins,some minerals,fib re & hardly any fat ,eat all you can,even if it is not a preferred taste worth developng a taste for it.
