Hey there! I always seem to run into this problem when baking. It's such a pain! Anyway, I have a few great substitutes that all work terrifically.
ONE (1) egg equals any one of the following:
2 Tbs. flour
½ tsp. oil
½ tsp. baking powder
2 Tbs. liquid
---
2 Tbs. water
1 Tbs. oil
½ tsp. baking powder
---
1 Tbs. flaxseed* (ground in coffee mill)
3 Tbs. warm water
---
1 Tbs. gelatin or fruit pectin
3 Tbs. warm water
---
Any of those four will be great for your muffins! Happy baking!

You can substitute 1 egg with 3 or 4 tablespoons of water ; or with 1 teaspoon of cornstarch ( if the recipe calls for more than 1 egg.)

Tofu is a replacement and these:
Egg Replacement Options
• 1 egg = 2 Tbsp. potato starch
• 1 egg = 1/4 cup mashed potatoes
• 1 egg = 1/4 cup canned pumpkin or squash
• 1 egg = 1/4 cup puréed prunes
• 1 egg = 2 Tbsp. water + 1 Tbsp. oil + 2 tsp. baking powder
• 1 egg = 1 Tbsp. ground flax seed simmered in 3 Tbsp. water
• 1 egg white = 1 Tbsp. plain agar powder dissolved in 1 Tbsp. water, whipped, chilled, and whipped again

2 tbsp corn starch = 1 egg
2 tbsp arrowroot flour = 1 egg
2 tbsp potato starch = 1 egg
1 heaping tbsp soy powder + 2 tbsp water = 1 egg
1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg.
1 banana = 1 egg in cakes.
1/4 cup applesauce or mashed banana plus 2 tsp. oil
1tsp.cornstarch plus 1/4 cup of water

2 eggs make it fluffier, 1 egg, makes it goo-ier, thicker like. People say you can replace w/ applesauce. 1 egg will b fine. Eggs vary in size too. Go w/ just the 1! MMmm enjoy sounds yummy!

You can take 2tablespoons of room temp milk plus 1tablespoon of cornstartch and about 1/2 teaspoon shortening. mix together and then add to batter.

actually, I have used a heaping tablespoon of mayonnaise in place of an egg when baking cornbread. Mayonnaise is egg.
