Wow! To have a vinegar that aged!!! Balsamic vinegar is great on just about anything. You can certainly use it in a salad dressing, but have you ever considered it with strawberries and vanilla ice cream? Just a dash or two with the sweetened berries brings out a richer flavor in them for some reason. Also, the older the balsamic, the thicker and sweeter it becomes. Consider a dash in your pot roast glaze, or on your sweet potatoes, in your cole slaw, and mixed with some bananas.

Aged balsamico is great with meats. Take a steak, pan fry it and drizzle so vinegar over it just before serving. Enhances the meat flavor big time. Also goes great with figs, strawberries ( mix the strawberries with honey, pepper, drizzle with balsamic and spread some mascarpone on rye bread and top with the strawberries. ) Or grilled fennel - pretty much anything goes.

CHICKEN WITH BALSAMIC VINEGAR

1 onion
1/2 lb. carrots
2 tbsp. butter
3/4 tsp. salt
1/2 tsp. pepper
3 1/2 to 4 lbs. chicken parts
1/2 c. Balsamic Vinegar

Chop onion. Cut carrots on diagonal into 1/4 inch slices. Melt the butter in a large frying pan. Brown the chicken on both sides over medium heat, about 15 minutes in all. Remove from the pan. Add the onion and carrots and cook, covered, until soft, about 15 minutes. Return the chicken to the pan. Add the vinegar, salt and pepper. Cover and cook until the juices run clear when the chicken is pierced with a fork. (20 to 25 minutes.) If Balsamic Vinegar is not found, substitute half vinegar and half water and add a pinch of sugar.

Serves 4.

PENNE WITH TOMATOES & BALSAMIC VINEGAR

Penne col sugo di pomodoro all 'aceto balsamico 3-4 cloves garlic, sliced very thin 2 1/2 tsp. dried rosemary 2 c. canned plum tomatoes, drained Salt, freshly ground black pepper 1 lb. penne or other short tubular pasta 2 tsp. balsamic vinegar

Put oil and garlic in large skillet over medium heat. As soon as the garlic starts to sizzle, add tomatoes, salt and grind lots of pepper, add rosemary. Cook 10 to 12 minutes, then turn off heat.

Cook pasta in lots of salted water. When done, al dente, drain and immediately put into skillet with sauce. Turn heat on low and toss pasta in sauce 1 minute. Turn off heat; make a well in middle of pasta, pour in vinegar, toss pasta well. Serve at once.

I LOVE Balsamic. I guess sending it to me is out...

Here is my favorite recipe, which uses a nice amount:

Grilled asparagus
1 pound asparagus
3 tablespoons balsamic vinegar
2 tablespoons fresh lemon juice
1 tablespoon olive oil
1 tablespoon low-sodium soy sauce
1/8 teaspoon black pepper
Cooking spray

Prepare grill.
Snap off tough ends of asparagus. Combine all ingredients except cooking spray in a large zip-top plastic bag; seal and marinate for 30 minutes. Remove asparagus from bag, and discard marinade. Place asparagus on grill rack coated with cooking spray; grill 5 minutes on each side or until asparagus is done.

Reduce it over heat and make Balsamic Syrup. It's so yummy over green beans with toasted almonds, over fruit, melon.

Put it in a saucepan over medium/high heat and whisk it lightly until it is reduced and thick. Will coat the back of a spoon.

Add a little butter to tighten the sauce up further.

Get a nice fresh head of romaine lettuce washed then cut in half lengthwise. Dip into a pan full of the vinegar (or to conserve your vinegar, sprinkle the cut sides with it), then into fresh grated parmesan cheese. Place on a very hot, preheated skillet or griddle and heat just until the cheese starts to melt. You don't want the lettuce to really warm up, just the cheese to get crusty and delicious!

Ice cream, fresh strawberries and mint drizzled with the 10 yo Balsamic- Yummy!

Drizzle some on fresh melon and prosciutto, the possiblities are endless... dress salad greens with it add blue cheese, walnuts and strawberries..
