Candied Sweet Potatoes
5 tablespoons unsalted butter
3 pounds sweet potatoes
Kosher salt
1/2 cup chopped pecans
1/2 cup coffee flavored liqueur (recommended: Kahlua)
1 cup heavy cream
3/4 cup dark brown sugar
1 (10.5 ounce) bag mini marshmallows

Heat the oven to 350 degrees F. Use 1 tablespoon of the butter to grease a 2 quart oven-proof baking dish.
Peel the sweet potatoes and slice them 1/8-inch thick. Place 1/3 of the potatoes in the bottom of the baking dish. Season with salt and sprinkle over 1/3 of the pecans. Repeat 2 more times. Pour the coffee liqueur and cream over the potatoes. Spread the brown sugar evenly over the top and dot with the remaining butter. Cover the dish with aluminum foil and bake until the sweet potatoes are tender when poked with a sharp knife, about 50 to 60 minutes. Remove the dish from the oven and turn on the broiler. Remove the foil and cover the sweet potatoes evenly with the marshmallows. Put the dish under the broiler until the marshmallows are lightly browned, about 1 minute. Let cool a bit before serving.

Prep Time: 15 minutes
Cook Time: 1 hour 5 minutes
Yield: 8 to 10 servings

No, you aren't dumb. I don't really know how to make sweet mashed potatoes either. I don't know what you need it for, but i have a really good sweet potatoe casserole which is pretty much the same thing, exept it has a topping. Ill give it to you.



Delicious Sweet Potato Casserole

8 large Sweet Potatos. Boil until soft than peel
1/2 cup sugar
1/2 stick butter
2 beaten eggs
1 teaspoon vanilla
1/3 cup milk.

Mash potatos using a mixer. Add teh rest of the ngredients. Mix until well blended. Put into a 9 by 13 inch pan or larger.

Top
1/3 cup melted butter
1/2 cup flour
1 cup brown sugar
1 cup chopped pecans

Mix all ingredients together and spread on top of the potatos. Bake at 350 degrees for 30 minutes.

My american mum in law makes a wonderful sweet potatoe dish but a bit too high in fat for my taste. So i've changed it a bit and it goes like this:
Boil the sweet potatoes, peeled, until soft.
Once ready, mash them with a fork, put them in an oven dish. You may have to add some of the water the potatoes cooked in to make the mixture more moist. I DO NOT HAD BUTTER, MILK OR ANY TYPE OF FAT.
Sprinkle some pecans/walnuts over the top of the mashed sweet potatoes and finish with some brown sugar.
Put in oven on high temperature to 'grill' the pecans/walnuts and melt the sugar for just a few minutes. Switch the oven temperature to a lower one to keep the dish warm.

This dish is low fat and extremely easy to make. I don't bother with all the good stuff my mum in law uses; too much work and too fattening! It's a nice thing to eat with a pork roast for instance.

Aside from mashed, which you have a good head start on, try my favorite recipe. I actually had these for dinner tonight:

Roasted Sweet potatoes
2 (8-ounce) peeled sweet potatoes
1 teaspoon olive oil
1/2 teaspoon curry powder
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/8 teaspoon ground cloves
1/8 teaspoon pepper

Preheat oven to 425°.
Cut sweet potatoes in half lengthwise; cut each half lengthwise into 6 wedges. Combine sweet potatoes and remaining ingredients in a bowl; toss gently to coat. Place wedges on a baking sheet (do not overlap); bake at 425° for 25 minutes or until very tender.

If you're making mashed sweet potatoes, then by all means add milk, butter, and a little nutmeg along with some salt and pepper.

I like mine baked with butter, salt and pepper. You can also boil them and mash them or roast them. Pretty much anything you can do with a regular potato you can do with a sweet potato. Try looking for recipes on the Food Network.

All I do is bake'um and add butter, sweet potatoes are SO good you dont have to do much to them to make them taste good, but then again I'm a pretty simple guy!

Mash 'em up with a bit of butter, place in a casserole dish, top with marshmellows and bake at 350 for about fifteen minutes (until marshmellows are a bit golden).

You can mash them with a little cream, butter, cinnamon, and brown sugar to taste. Put them in a casserole, and top with a mixture of brown sugar, butter, and pecans. Bake at 350 degrees until heated through. . .

. . .and warn your tongue not to slap your back teeth out because this stuff is so good! ;-)

I steam them in the microwave steamer. Just cut one big sweet potatoes into 6-8 pieces then put them in the microwave steamer for 6-7 minutes (on the 850 watts microwaves).
