This sauce is absolutely delicious over pasta. Good to serve to important company!

In Kampuchea Krom, chitlin refer to pork small intestine that we use for rice soup, stir-fry and appetizers. We use pork large intestine to makes (stuffs) Khmer and Chinese sausages. Cooking with pork intestine is easy but cleaning could be a task. Back home, chitlin usually already cleaned before it hit the market, but it is always good idea to clean it again. The villagers uses Khmer ancient technique by boiled pork intestine with a piece of bamboo charcoal after cleaned to remove any residue odor. Then rinses many times before cook it.
Stir-fry pork small intestine with pineapple is one of Khmer Krom men favorite appetizers (mahope sar).
Ingredients :
½ lb Cleaned pork small intestine
2 Tablespoons salt
2 Tablespoons baking soda
4 Cups water
2 Tablespoons vegetable oil
3 Cloves garlic, minced
1 Yellow onion,sliced
1 Tablespoon soy sauce
1 Tablespoon fish sauce
1 Tablespoon sugar
¼ Teaspoon black pepper
1 Fresh pineapple, shelled and cut to small chunks, or 1 large cann chunk pineapple
2 Stalks green onion, chopped
1 handful chopped fresh cilantro
Procedures :
Cut pork small intestine to bite sizes, then turning it inside out by using chopstick to pushed it through. Pour salt on intestine, rubs under cold water, rinses, repeat same procedure with baking soda.
When done put pork small intestine and 4 cups water in a small soup pot, cook it for 15 minutes (increase cooking time if prefer tender).
Removed pre-cooked pork small intestine from stove, rinses several times under cold water, drain and set it a side.
Pre heat a skillet or wok.
When skillet is hot, add oil, garlic, yellow onion and pork small intestine, stirs well.
Seasoning with sugar, soy sauce, fish sauce and black pepper, stirs well,add pineapple, stirs.
Top with green onion and cilantro before serve.
Serve hot as appetizer or with rice.

FAJITAS

2 chicken breast fillets or strip steaks
3 tsp. Mexene chili powder
1/4 cup brown sugar
2 large red peppers, sliced
1 large spanish onion, sliced
1 tsp. canola oil
1/2 lemon or lime
sour cream or plain yogurt
guacamole (optional)
4-5 flour tortillas

Prepare the vegetables.
Combine them in a large bowl and toss with oil.

Heat grill until good and hot.

Mix the chili powder and brown sugar

Just before putting the vegetables and meat on the grill, coat the meat with the chili powder mixture.

Spread the vegetables out on a perforated grilling sheet and put it all on the grill.

Grill about 7 minutes until blackened, then flip both the meat and the vegetables.

Cook another 7 min or until meat is done.

Arrange vegetables in a bowl or on a platter and squeeze the lemon over them.

Thinly slice the meat.

Assemble fajitas and enjoy.

If you like em hot, add your favorite hot sauce :)

I used to fry the meat plain and then stir fry the vegetables and add some oragnge juice concentrate, but since I started doing them like this I couldn't go back.

CHICKEN FAJITAS

4 boneless skinless chicken breasts
1/4 stick butter
1 cap full Mrs. Dash (regular or chipotle)
1 large onion
1 green pepper
1/4 brown sugar
lettuce, tomato, sour cream, guacamole, cheese, tortillas

Slice chicken into long strips, place in pan with half of the butter and Mrs. Dash. Cook until done and lightly browned. Stir in a small amount of water or chicken broth and the brown sugar. Cook until caramelized.
Chop the pepper and onions into strips and rings, sauté in a separate skillet with the remaining butter. Cook until onions are caramelized and peppers have crispy edges.

These fajitas are really easy to make and a little different because they're sweet and spicy.


SPAGHETTI PICCATA

1 lb spaghetti
1/4 cup olive oil
3 cups fresh mushrooms, sliced
1 garlic clove, minced
1 cup dry white wine
1/3 cup fresh lemon juice
2 teaspoons capers
1 tablespoon fresh parsley, chopped (flat-leaf)
salt & pepper

Cook spaghetti according to package directions.
Meanwhile, heat olive oil in skillet over med. heat.
Saute` mushrooms and garlic lightly for 2 minutes.
Add white wine and lemon juice.
Simmer over low heat until liquid has cooked down by one-half (about 4 min.).
Stir capers into sauce and heat thoroughly.
Add cooked spaghetti to skillet and season with salt and pepper.
Sprinkle with parsley.
Garnish with lemon wedge and serve.

Chicken Fajitas
(Serves four)
Combine the following ingredients in a marinade container or large bowl.


Juice of 8 limes (small bottle of Real Lime juice)
12 tablespoons of olive oil
2 teaspoons of oregano
2 teaspoons of pepper
2 teaspoons of salt
1 teaspoon of cumin
1 clove of garlic (diced) or one teaspoon of minced garlic
3 teaspoons of coriander or 1/2 cup of fresh cilantro
Add three pounds of boneless, skinless chicken that has been pounded flat to the marinade. Let sit for at least three hours (the longer the better). For best results, cook on an outdoor grill (duh).

Other items you'll need:


Flour tortillas (found in the dairy case at the super market)
Shredded Monterey Jack cheese
Sauteed onions (tons), peppers, etc.
Sour Cream
Guacamole (Mashed avocados with diced Bermuda onion, diced tomatoes, Tabasco sauce, pepper and line juice)

Spaghetti Factory's Mizithra Cheese Sauce

2 tablespoons Flour
4 tablespoons Butter
1 teaspoon Olive Oil
2 tsp. crushed fresh Garlic
2 tablespoons chopped fresh Parsley
1/2 cup Half and Half
1 cup Milk
3/4 cup Mizithra Cheese (can substitute Romano)
White Pepper to taste

On medium heat, add butter and olive oil; whisk until butter is melted. Add flour and whisk for about 1 minute; add garlic. Whisk in milk, half and half, and parsley. At the last moment add the cheese. Whisk well, and pour all over hot spaghetti or other pasta.

Olive Garden's Spaghetti Carbonara

1/4 C. flour
1/4 C. butter
1 qt. milk
1/8 tsp. pepper
1/2 tsp. salt
24 slices extra thick bacon, fried until crisp, then cut into ¼” slices
1/4 C. olive oil
3 C. mushrooms, sliced
6 Tbsp. scallions, finely minced
1 lb. spaghetti, uncooked
2 tsp. fresh parsley, finely chopped
1/2 C. Parmesan cheese, freshly grated

Melt butter in 4-quart heavy saucepan over medium heat. Stir in flour and cook for 1 minute. Add milk, salt and pepper and stir vigorously with wire whip until mixture barely comes to a boil. Reduce heat and simmer 5 minutes, whipping frequently while sauce thickens. Keep warm.

Add bacon into sauce. Heat olive oil in large skillet over medium heat. Add sliced mushrooms and minced onions and sauté until golden. Add to sauce. Cook spaghetti according to package directions. Drain well and add to the sauce along with the parsley. Blend well and transfer to serving dish. Sprinkle with Parmesan cheese and serve immediately.

Amazing Homemade Spaghetti Sauce

2 small onions, chopped
4 cloves garlic, chopped
1/4 cup vegetable oil
2 (28 oz) cans diced tomatoes, undrained
2 (12 oz) cans tomato paste
8 cups water
1/4 cup sugar
2 Tbsp. dried Italian seasoning
1 Tbsp. salt
1 Tbsp. dried basil
2 tsp. black pepper
1 tsp. dried crushed red pepper (I would half this because it was too hot for me the first time I made it)

Saute onion and garlic in hot oil in Dutch Oven over medium heat for 10 minutes or until onion is tender. Stir in diced tomatoes and remaining ingredients. Bring to a boil, reduce heat, and simmer, stirring often, 2 hours. Leave the lid off the pot so it will thicken some. Serve over hot, cooked spaghetti.
