Eat these wrapped sandwiches with your hands, at the table or walking out the door. Use whatever kind of tortilla you like best. If there's some in the fridge, use leftover cooked chicken or already cooked and chopped chicken pieces from the store, even the flavored kind, if that's what you like. Add any tomato topping foods that are handy or that you have time to get ready - maybe sautéed onions or green peppers, avocado slices or mashed avocado (guacamole), shredded lettuce or chopped parsley (cilantro).

Foods you need:
3 eggs
3 tablespoons milk
3 (7- to 9-inch) plain or flavored flour or whole-wheat tortillas
Cooking spray
1/2 cup (about 3 oz.) chopped cooked chicken
1/4 to 1/2 teaspoon chili powder, if you like
3 tablespoons shredded Cheddar or Monterey Jack cheese/li>
Salsa or taco or pizza sauce
Additional toppings, if you like
Kitchen items you need:
Small-sized mixing bowl
Fork or whisk
Kitchen towel
10-inch nonstick omelet pan or skillet
Kitchen timer
Pancake turner
Big spoon
1/3-cup measuring cup
1-tablespoon measuring spoon
1. Break the eggs into the bowl. Add the milk. Beat the eggs and milk with the fork or whisk until the eggs and milk are blended. Set the bowl aside.

2. Heat the tortillas according to the package directions. Cover the tortillas with the kitchen towel to keep them warm.

3. Coat the pan evenly with the spray. Put the pan on a burner and heat it over medium heat for a little bit. Sprinkle a few drops of water into the pan. The pan is hot enough when the water sizzles and dances in the pan.

4. Add the chicken and chili powder. Cook and stir the chicken about 1 to 2 minutes, until it is heated all the way through to the middle of each piece.

5. Pour the egg mixture into the pan over the chicken. The eggs will start to set. Hold the pancake turner upside down and gently pull it across the bottom and sides of the pan. Keep pulling the pancake turner through the eggs and chicken until the eggs are thick and you can't see any more liquid eggs in the pan. Don't stir all the time or the eggs will break into tiny pieces. When the eggs are thick and there is no more liquid egg in the pan, remove the pan from the burner.

6. Spoon the eggs into the measuring cup. When the measure is full, spoon the eggs into the center of each warm tortilla. Sprinkle each tortilla with 1 tablespoon of the cheese. Spoon the salsa or taco or pizza sauce on top of the cheese. Add any other toppings you like. Roll up each tortilla.

Egg and chicken omelets.

But my favorite egg recipe: Eggies in a basket. Cut out a 2 in. square from a piece of bread, then butter both sides. Put in pan. Flip over when side 1 is beginning to brown. Crack egg in square and fry egg. Flip one more time and finish browning side 1. Fried egg in a piece of toast!

Have you tried a fritatta? Basically, it's an unflipped omelet - (this is the "cheater" version) whip your eggs, pour them in a small skillet, add your chicken and veggies and cheese cook till the eggs are cooked through...

If you have chicken one night and you have left over, make this the next morning.

Chicken Fried Rice w/ Egg
Chicken & Spinach Quiche
Chicken & Herb Fritatta

Fried Rice with Ham
Serves 4.

3 large eggs, lightly beaten w/ 2 tsp. waer
2 Tbsp vegetable oil, divided
½ tsp. toasted sesame oil
Coarse salt to taste
4 green onions, thinly sliced diagonally (both white and green parts)
4 garlic cloves, minced
5 oz. ham, thinly sliced and chopped (**can use cooked chicken, pork, or shrimp as well)
4 cups cold cooked rice
3 Tbsp. rice vinegar
1 cup frozen peas, thawed

In a large nonstick skillet, heat 1 Tbsp. oil, swirling to coat. Beat eggs, with 2 tsp. water and ½ tsp. coarse salt. Cook in skillet, moving cooked eggs aside gently to allow raw eggs to run in their place, about 2 minutes. Transfer to plate; when cool enough to handle, cut into strips.

In same skillet, heat remaining Tbsp. vegetable oil and sesame oil. Add garlic and scallions, heat and stir until fragrant, about 1 minute. Add ham and rice, season with salt, and cook until very hot, stirring often, about 5 minutes. Add vinegar, peas, and eggs, cook until very hot, about 2 minutes.

that must be considered wrong in some cultures to cook an animal in it's own egg.
