I wouldn't use the plain flour that you have, throw it anyway and buy some more. And you will need the following
4 oz (110 g) plain flour
pinch of salt
2 large eggs
7 fl oz (200 ml) milk mixed with 3 fl oz (75 ml) water
2 oz (50 g) butter
First of all sift the flour and salt into a large mixing bowl with the sieve held high above the bowl so the flour gets an airing. Now make a well in the centre of the flour and break the eggs into it. Then begin whisking the eggs – any sort of whisk or even a fork will do – incorporating any bits of flour from around the edge of the bowl as you do so.
Next, gradually add small quantities of the milk and water mixture, still whisking (don't worry about any lumps as they will eventually disappear as you whisk). When all the liquid has been added, use a rubber spatula to scrape any elusive bits of flour from around the edge into the centre, then whisk once more until the batter is smooth, with the consistency of thin cream. Now melt the butter in the pan. Spoon 2 tablespoons of it into the batter and whisk it in, then pour the rest into a bowl and use it when needed to lubricate the pan, using a wodge of kitchen paper to smear it round.
Now get the pan really hot, then turn the heat down to medium and, to start with, do a test pancake to see if you're using the correct amount of batter. I find 2 tablespoons about right for a 7 inch (18 cm) pan and 3 tablespoons for an 8 inch (20 cm) pan. It's also helpful if you spoon the batter into a ladle so it can be poured into the hot pan in one go. As soon as the batter hits the hot pan, tip it around from side to side to get the base evenly coated with batter. It should take only half a minute or so to cook; you can lift the edge with a palette knife to see if it's tinged gold as it should be. Flip the pancake over with a pan slice or palette knife – the other side will need a few seconds only – then simply slide it out of the pan on to a plate.
Stack the pancakes as you make them between sheets of greaseproof paper on a plate fitted over simmering water, to keep them warm while you make the rest.

Flour 5 years Old? Probably not good anymore! It may be edible but with old flour you won't get good cooking results! It's elasticity is not as good as fresh flour!
Get some fresh flour... All I use for pancake batter
is: Water, flour, baking powder ( 1 tablespoon)
1 egg or 1&1/2 tablesoons corn starch!
I use 2 cups flour mix in baking powder in that flour
then add water to make a mixture thick like sour cream
with a few lumps. I fry in pan sprayed with cooking oil
or sometimes cook in coconut oil!
Coconut oil may cost more that other oils but U don't need as much as other oils so it's less fattening!
I like putting cheese and habenaro on my pancakes!
if U use cornstarch instead of eggs you're making griddle cakes instead of pancakes

Yeah I don't know about 5 year old flour and olive oil but here is a Basic Buttermilk pancake recipe.
1 cup all-purpose flour
1 Tablespoon sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
1 beaten egg
1 cup buttermilk
2 Tablespoons oil
Mix the dry ingredients together. Mix the egg, buttermilk and oil together and add all at once to the dry ingredients.
Stir until slightly lumpy. Cook in a hot non-stick and lightly greased or buttered skillet.

30 grams of flour

butter for frying is best as the olive oil will leave quite a strong taste, try slicing a banana into the pan pouring the mix over the top and cook sprinkle with grated chocolate and serve with ice cream and eat straight away..... then repeat process until you feel sick !
These are for English thin pancakes add more flour to make a thicker batter for American pancakes, drop a spoonful on to a griddle and wait until top bubbles before turning

firstly get some fresh flour. you need about 100grms flour 2eggs and a little milk. mix the flour and milk to a smooth batter add the eggs and beat these in to the mixture . heat the pan adding a small amount of oil, when the pan is really hot, add a small amount of the batter mixture turn ,after a few min and cook other side.serve with castor sugar, lemon or be a bit more adventerus and make up your own filling . great with strawberrys.

Did you say 5 years old flour? If so dump the flour.
Your recipe is fine but add some melted butter to mix, and don't make them too thick. Do not add bicarb

its 6 oz plain flour, 1 egg and milk, of the top of my head i think it's half pint of milk. mix the egg and milk together, whisk into flour.
Don't use flour 5 years old, god knows whats in it, old flour is a breeding ground for mites!!!!!get some new stuff , it's cheap enough.
pour oil into frying pan, make sure it's red hot, pour excess oil out of pan into different bowl, then pour in thin layer of pancake mix.
Swirl it in pan, should cook really quick, if pan is hot enough, turn over and cook other side.
Pour more oil in pan , and be sure to pour out excess, and keep going.
Another tip is to use a palette knife to turn pancake, much easier to handle,
