Signs of Deteriorated Oil

Oil darkens with use because the oil and food molecules burn when subjected to high/prolonged heat.

The more you use an oil, the more slowly it will pour. Its viscosity changes because of changes to the oil's molecular structure.

Loose absorbent particles accumulate as sediment at the bottom of the storage container or are suspended in the oil.

When smoke appears on the oils' surface before the temperature reaches 190 degrees C (375 degrees F), your oil will no longer deep-fry effectively.

If the oil has a rancid or "off" smell or if it smells like the foods you've cooked in it, it should be discarded.

I prefer peanut oil and have even used olive oil for deep frying. YES...I have even used olive oil. I prefer them solely because I like the taste. You can use any oil you are accustomed to. You can save the oil if you like. If your fryer has a fitted lid that is not attached to the fryer itself...then just keep the oil in the fryer. If your fryer has one of those lids that are connected to the fryer and does not really have a good seal on them...I would transfer the oil to a coffee can or jar of some sort and save to use again. I would say you could easily cycle your oil for 4 to 6 uses after which I would ditch and start with fresh.

It depends on the type of oil. There is a book called 'The Chemistry of Cooking' which covers some very interesting things about the science of food preparation. One of these is why oil actually seems to cook food better after it has been used 4 or 5 times!! Depending on what kind of oil you have, it may take several uses before it perform at its best. I use Peanut Oil in my deep fry cooker. Peanut oil does NOT pick up the flavor of the foods cooked in it. You can cook chicken, then onion rings, then fish, then chicken and none of the flavours are carried over. I Fry turkeys primarily... and after the 3rd or 4th the oil seems to work best. As long as the oil is strained and kept in a cool place with a lid on to keep insects out, I have used the same oil 15 or 20 times over aperiod of 8 months with no ill affects to health or food quality. The longevity of any oil depends on the type of oil you are using and what temperatures you heat it too and for how long.

If you are concerned about your health you will use it no more than twice, preferably once.

Rancid oil is carcinogenic and should be avoided at all costs, (it also smells disgusting and will effect the flavor of the food).

Oil used for deep frying should have a high smoke point or it will become unstable when heated to a high temperature. Peanut oil is appropriate.

It depends on the type of oil, different oils go rancid faster than others.

Go by looks and smell. If your oil is crusty and really dark it is time to change it. Or if you cook something really smelly like fish, you may have to change it more often. We're deep fryed a lot over the years and using vegetable oil, we normally just changed it as needed.

Hi Mwille010, Frying Oil will last for quite a long time if you look after it, Once you have used the oil let it cool down but not get cold, then strain it through a muslin cloth and CLEAN the fryer out
before returning the used oil. Look after the oil and it will last longer...... Donno

well i love to cook so quality of food is important to me. i myself do not use the oil for more than 3 days. if you change it every 3 days it will keep your fried foods crispy and not tasting like all the other foods you have cooked, plus the oil will give your food a burnt taste.

I use it 2-3 times before switching it out unless I am cooking like fish sticks then it has to go cause that is all the next food you cook will smell like.

It's best to change after you've used it twice, any longer and it will start effecting the taste of your food!

Until blue midgets start crawling out of it. Even then just wack 'em and stick 'em in the microwave. They make a really neat pop!
