I want to take a girl out on a date, but she has been to all the obvious places (Disneyland, the beach, Knotts, Magic Mountain, etc.) Is there anywhere that you recommend in LA?
I'm looking for more "fun" or "exciting," than "romantic"

Your didn't mention her age, or what she likes to do for fun.
Los Angeles has an incredible variety of things. If you're younger, there's always Kart-World, sooo much fun! Santa Monica has nice little roller coasters, and then you can walk to the Promenade.
If you're older, perhaps the newly remodeled Griffith Observatory, Of the Getty Museum or Villa, you could try to impress her by reading up on the place and making comments about important pieces.
If you're not into the intellectual stuff, Hollywood & Highland has a bowling alley, places to shop, and much more. Keep in mind it's more about the company, so I would still read some interesting fact to have a nice conversation during your outing.
