well, i always make a big portior loin steak, with potatoes, spaghetti and maybe some corn or some veggie he likes. for an appetizer i make shrimp cocktails, and for desert a big pan of soft warm brownies (to make alamode style ofcourse or just plain) but i always add a drizzle of chocolate to the brownies just before they're fully done. so they have a chewy yummy center.

You aren't limited to those choices. There's also fish and seafood, turkey, pork, duck, lamb and countless meatless dishes you could also consider. One thing you could do is buy a good cookbook and peruse their menus for something that looks good. Also, there are online cooking sites with tons of recipes on them. Just google different things and check them out. They usually have a picture of the dish on the site also, so you can see how it should turn out.
The one thing you should do, as one answerer has already pointed out, is get your fiance's input, unless you want this to be a total surprise. In which case you may be surprised if he throws the whole thing in your face for making something he hates or may be allergic to. When I made dinner for my wife when we were dating, I always made sure to apprise her of the menu before plunging ahead to give her time to make objections. There's nothing more damaging to a serious relationship than inconsideration.

A lot of men do prefer steak, but for something fun and different Cornish game hens are easy to make and look impressive. Season them with salt, pepper, sage and a squeeze of lemon juice, bake and they are pretty yummy. A side dish of wild rice or roasted potatoes along with sugar snap peas or whatever veggie you like would be good too. For desert chocolate dipped strawberries are very easy to make and are also a sexy treat to feed each other.

Grilled chicken breast with Swiss cheese served with texas toast, tator tots, and a salad.
Ingredients: 2 boneless skinless chicken breasts
2 slices swiss cheese
Texas toast bread or regular bread
1 jar soy sauce
salt pepper
frozen tator tots
Salad
favorite dressing
In a non-stick skillet cook your two chicken breast on medium heat. Light salt and pepper and splash with soy sauce. When there is good carmelization on both sides of the chicken remove and place on a microwave save plate. Microwave for two to three minutes. Rmove place on your plates and add swiss cheese on top. Serve with the cooked tator tots, toast, and salad.

Beef, if its a steak on the grill---with a big ole baked potato and sour cream, hot rolls, and a mixed salad.
Or barbecued chicken with hash browns, and peas & carrots for color.
