Does anyone know of a recipe using eggplant that doesn't use tomatoes OR cheese?

Is there such a thing as a good eggplant recipe? With or without tomatoes? Bleah!

Eggplant caviar is good as a bread spread, but only to use up unwanted eggplants given to you by your overzealous gardening neighbor, who just gave them to you to get rid of in the first place!

Slice Eggplant. Sprinkle slices with salt and let stand until the water in the eggplant is drawn out and drained away. Pat slices nice and dry. Dip in beaten egg, then in mixture of flour, baking powder, salt and pepper. To thicken coating, you may repeat with second dip in egg and second roll in flour mixture. Fry the coated eggplant slices in fat an inch or so deep, moving them around and turning them to keep from sticking. When they are nice and brown and crispy, drain on paper towels.

Recipe

heat pan with olive oil. Cut eggplant into slices and add them to the hot pan. add 1 jalapeno, sliced. Saute till the eggplant becomes soft. Add salt and cilantro, fat free sour cream. mix and serve.
