I have a three year old boy and a three year old nephew
we have a variety of things for lunch:
taquitos with salsa
frozen burritos
Tyson Chicken Tenders with french fries
"baby" smoked sausages with fried potatoes
mini pizzas
fish sticks
sandwiches with chips
soup 'n sandwich
mac 'n cheese
left overs
sometimes if i am in a rush i will heat up a Hungery Man lunch and split it between the two of us and sometimes the two of them.

VARIETY! To keep the prep-time down, try variations on a theme. Instead of spaghetti, cut up some fresh veggies and give it a dash of italian dressing or make casserole-type things. Meatloaves work well and can be changed easily. I am a big fan of the crockpot, small prep time with lots more possibilties. Set up a pot roast in the am...dinner on time and you only have to dish it up. My kids like "munchins" little meals made of a bunch of appetizer stuff, cut-up veggies, crackers and cheese or peanut butter, lunchmeat and lettuce in a tortilla, stuff like that.
I have epilepsy and can't cook if I'm home alone so we tend to eat out of cans alot, I don't recommend it as a diet in and of itself, but it's good in a pinch.

Pasta with some meat and veggies is great. PB&J sandwiches, ham sandwiches. Plain omelets (folded in half) with toast stick eyelashes.
Try to include a lot of variety so that there is always something interesting and new to try. Don't ever convey that vegetables aren't just a regular food or are icky!

Meat and Cheese rollups were a big hit at our house for lunch along with baby gerkin pickles. Chicken Breast with BBQ sauce with Peas, Green Beans or "baby trees" Brocolli still go over well.

MAC AND CHESSEE!!! OR IN OTHER WORDS EASY MAC!!! WOOOOOO Yeah that is the best thing for a three year old.. they love it so much.. hey trust me i have 30 little baby cousins that love it.. with out it trust me thats a really good idea.. or sandwiches or even cookies for desert.. and maybe even ice cream for dessert becasue the best thing is for the little muchkin to love ya.. with out that your toast... but like i said EASY MAC always does it!! and also the lean cuisine for kids!! that will soo help you.. its fast, easy, and has really fun things.. i dont know where you live but where i live they sell it for kids too... :)

You take a really big cauldron or oven, give the boy a bath, baste with Jack Daniels and roll him in rosemary and thyme, and... Oh, cook FOR a boy. Never mind. Uh. McDonalds.

Rice with peas or broccolli. You can make yellow rice by adding some saffron. Add a couple of sausages. And some ketchup if they're the kind of child that likes sauces.

You should check out familyfun.com They have a WHOLE bunch of little kids food and things for them. Cakes heathy foos and even games to help kids learn!
