When meat is cooked, juices come out. These juices are gelatin. When you leave a roast on a plate and refrigerate it you see a jelly like solidified juice on the plate. This is what we make gravey from.
Commercial jello is made from the juices from cooking meat. It is not made from hooves and snouts and etc.
Gelatin is a soluble protein. It is called incomplete because it does not contain all the amino acids that are needed for humans. Gelatin is a protein.
