With the bread crumbs....so good and still easy to make. Had it for lunch today.
Dip 1/4 in. slices in egg, then seasoned bread crumbs. Heat oil in a skillet and shallow fry until deep golden. Set on paper towels. Transfer to baking dish and layer/alternate with tomato sauce. Top with mozzarella and bake until melted. Mmmm

If you do eggs and bread crumbs it will stay on the eggplant better. I usually mix a tiny bit of milk in with the egg too. Then once you dip the eggplant in the egg/milk mixture dip it in the breadcrumbs. I also mix parmasean cheese and garlic salt in with the breadcrumbs to give it extra flavor!

Eggs and flour. Bread crumbs can overpower the subtle flavor of eggplant. I don't know how to pickle it but my uncle does and it doesn't seem very hard at all. Just make sure that you sterilize the jars you are going to put it in.

First of all you have to sprikle salt on the eggplant before anything. Then fry before egg and breadcrumbs are added. Pickled anything is easy go to epicurious.com and they will give you the rine recipe then add eggplant and let sit for an alotted amount of time.

Not sure about pickled eggplant, but I'm sure you could add pickling spices to it. Here's my recipe for Eggplant Parmesan:
Eggplant:
1 med. eggplant, peeled and sliced into 1/4 to 1/2 inch slices
1 1/2 cup Italian Bread Crumbs
1/2 cup grated parmesan cheese
2 eggs mixed with 1/2 cup water
Filling:
1 large container Ricotta cheese
1 pkg. frozen spinach, thawed and water pressed out
2 T Italian Herbs
1 egg
1 cup shredded Parmesan or Italian Cheese Blend
Sauce:
1 onion, diced
1 clove garlic, diced
1 28oz can Tomato Sauce
1 15 oz. can DicedTomatos with oregano and garlic
1/3 cup olive oil
3 T Italian Herbs
1/4 tsp Red Pepper Flakes
1 tsp Sugar
Kosher Salt
1/2 Tsp Fresh Ground Pepper
2 cups shredded Italian Cheese Blend or Parmesan
For the eggplant: place slices in a flat dish and salt liberally. Set aside to allow the salt to draw out excess moisture. After approximately 30 minutes, rinse egg plant and put in egg mixture. Dredge in breadcrumbs mixed with parmesan cheese
and brown in hot olive oil. Set aside and use paper towel to absorb excess oil.
For filling: blend ricotta with parmesan, spinach, egg and herbs
For Sauce: Saute onion and garlic until translucent. Mix remaining ingrediants and simmer over medium heat for 30 minutes. Add salt to taste.
To Assemble: Spread 1/2 cup sauce in baking dish. Layer a single layer of eggplant on sauce. Top with 1 cup sauce and 1/3 of the cheese mixture. Repeat until you end with sauce. Top with more shredded/grated cheese and bake at 350 degrees for 45 minutes. Let sit for approximately 15 minutes before serving. Good with linguine!

its all up to personal choice.
if you like the bread crumbs, go ahead and do it. if not leave them off.
and then comes the question of Fresh or Store bought bread crumbs, and how do you season it.

dip your eggplant in flour, then in egg, then in breadcrumbs, standard breading procedure. I like panko breadcrumbsfor their unique texture, and they brown extremely nice. Can only find them in asian supermarkets though.
