Chicken Parmesan
Serves 6
1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped
Instructions:
Preheat the oven to 350ºF
In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.
Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture.
Bake, uncovered, for 30-35 minutes or until tender.

Chicken Pasta Alfredo
Serves 6
6 Qts Water
12 oz Fettuccine Pasta
2 Tbsp Peanut Oil
6 (4 oz) Chicken Breast, boneless, skinless
2 (10-3/4 oz can) Cream of Mushroom Soup
1 (20 oz bag) Frozen Broccoli Florets
3/4 Cup Parmesan Cheese, grated
Instructions:
Heat a large pot of water, over high heat. When water comes to a boil add the pasta and boil for 8-10 minutes. Drain; reserving 2 cups pasta water. Cut the chicken into strips (1/4''x1''); set aside.
In a large frying pan, over medium-high heat, add the oil and chicken pieces stirring frequently until golden brown.
In a medium saucepan, over medium heat, add the chicken pieces, sauce, 1/4 cup reserved pasta water, stirring frequently. Add the remaining pasta water into the saucepan and bring just to a boil, then add the broccoli. Cook for 1-2 minutes. Remove from heat.
Divide the cooked pasta evenly between serving dishes and top with chicken and broccoli mixture.

Crab Quiche
Serves 6
1 (8 oz pkg.) Louis Kemp Crab Delights, flaked
3/4 Cup Mexican Style Cheddar Cheese, shredded
1/2 (8 oz pkg.) Cream Cheese, cut into 1/4'' cubes
1/4 Cup Green Onions, sliced
1/2 Tsp Salt
1/2 Tsp Basil
1/2 Cup Heart Healthy Bisquick
1 Cup 1% Milk ''Skim''
1/2 Cup Eggbeaters
3 SecondsNonstick Cooking Spray
Instructions:
Preheat the oven to 350ºF
Mix the crab delights, shredded cheese, cream cheese, onions, salt, and basil in a medium bowl.
Coat a 9-inch pie plate with nonstick cooking spray and spread the crab mixture into the bottom.
Beat the remaining ingredients until smooth. Pour over the crab mixture and bake for about 40-45 minutes.
Serve immediately.

Crock Pot Enchiladas
Serves 6
1 lb Ground Beef, lean
1 (8.5 oz) White Onion, chopped
1 (4 oz can) Mild Chopped Green Chilies (leave these out if you don't want it to be spicy)
1 (14 oz can) Enchilada Sauce
1 (10-3/4 oz can) Golden Mushroom Soup
1 (10-3/4 oz can) Cheddar Cheese Soup
1 (10-3/4 oz can) Cream of Mushroom Soup
1 (10-3/4 oz can) Cream of Celery Soup
Instructions:
Brown hamburger and chopped onion and pour off grease.
Put all the ingredients into the crock pot. Mix and cook low 4-6 hours.

Gravy Baked Pork Chops
Serves 4
4 (1-1/4 inch thick) Pork Chops
1/2 Tsp Salt
1/4 Tsp Freshly Ground Black Pepper
1 Tbsp Unsalted Butter
3/4 Cup 2% Milk
1/4 Cup Water
1 (10-3/4 oz can) Cream of Mushroom Soup
Instructions:
Preheat the oven to 350º F.
Season pork chops with salt and pepper to taste. Melt the butter in a large skillet over medium high heat. Sauté the pork chops in the butter for about 5 minutes per side.
In a separate medium bowl, combine the milk, water and soup. Place the pork chops in a 9x13 inch baking dishand pour the soup mixture over the chops.
Bake for 45 minutes. Serve immediately.

Spanish Meatloaf
Serves 6
1-1/2 lb Ground Beef, lean
1 (1.25 oz pkg) Taco Seasoning Mix
1/2 Cup Sour Cream
1 (4 oz can) Diced Green Chili Peppers
1 (8 oz bag) Mexican Style Cheddar Cheese, shredded
Instructions:
Preheat the oven to 350ºF
In a large bowl add the ground beef. Sprinkle the taco seasoning mix and blend well. Add the sour cream and diced green chili peppers; mix until well combined.
Place 1/2 of the mixture in a loaf pan, making a well in the meat, top evenly with the cheese and place the remainder of the meat mixture on top to seal. Bake for 45 minutes. Drain off any excess fat.
Remove from loaf pan and slice. Place the meatloaf on a warmed serving platter and serve immediately. Serve with mixed vegetables or a salad.

Strawberry Shake
Serves 2
1 Cup Frozen Strawberries, thawed
2 Tbsp Honey
1 Cup Cold 2%Milk
1 Cup Plain Yogurt
2 Whole Strawberries, garnish
2 Tbsp Sugar Substitute (recommended: Splenda)
Instructions:
Puree the strawberries and honey in a blender or food processor. Add milk, sweetener and yogurt; blend until smooth.
Pour into glasses; garnish each with a whole strawberry.

One of my favorite everyday foods to cook is pan fried pork chops. I simply sprinkle some salt and pepper on the chops, heat a skillet with some butter and vegetable oil in it until the butter melts. I cook the chops over medium to medium high heat until they're browned on the outside. Be sure not to puncture the chops with a knife or fork during the cooking. I love to serve a green leafy vegetable and yellow rice with this (I use the Goya brand).
On busy nights I make tacos using the recipe on the Old El Paso taco seasoning envelope - it's tasty and quick. I also saute cut up boneless chicken breasts in butter/olive oil and then add salt, pepper, garlic and a touch of ground ginger. I then add three or four spoonfuls of dijon mustard and some white wine and cook over med high heat until the chicken starts to brown. I serve this with some white rice and a green veggie. It's so good - be sure to gently scrape up the "caramelized" bits on the bottom of the skillet.
As a general hint - I often use the directions/recipes on the packaging when I make a dish for the first time and then adjust it the next time. I also check out Rachael Ray's 30 minute meals on tv for inspiration and I rely on my Joy of Cooking or Fanny Farmer cookbooks when in doubt. You've gotten quite a few good recipes from other folks that I intend to try. Happy eating!

Biscuit-Topped Tomato Beef Bake
Prep: 25 min
Ready In: 55 min
Serves: 4
1 lb. (500 g) lean ground beef
3/4 cup chopped onions (1 medium)
1 can (10 oz/284 mL) condensed tomato soup
1 egg
3/4 cup milk
1 cup KRAFT 4 CHEESE ITALIANO Shredded Cheese
1/2 cup chopped green onions (2 medium)
1-1/2 cups all-purpose baking mix
PREHEAT oven to 400°F. Brown meat in large nonstick skillet on medium-high heat; drain. Return meat to skillet. Add onions; cook and stir 5 min. Stir in soup; cook 3 min. or until heated through. Spoon into 2-L baking dish.
BEAT egg and milk in medium bowl with wire whisk. Add cheese and onions; mix well. Add baking mix; stir just until moistened. Drop by spoonfuls over meat mixture.
BAKE 35 min. or until biscuits are golden brown and cooked through.
Jazz It Up
Add 1 tsp. Worcestershire sauce along with the soup.
But here is my all-time favorite food..........better than take-out, any restaurant or home made food I ever had.
1 bag of Knorr Roasted Chicken & Linguine with Mozzarella and Zucchini in a Tomato Basil Sauce.
Found in your freezer section at the grocery store. A little pricy ($9) but definately worth it!!!!!! I swore I would never eat any frozen food but a friend made it. I was so amazed. Now I eat a least 2 bags a week. Lovvvvvvvvve it. Check the website to know what you are looking for.

heres a really good dish my mom taught me, its an easier version of lasagna: take about two bags of frozen ricotta or meat filled ravioli, some tomato sauce and shredded mozzerella cheese and parmesian cheese. (either jarred or homemade sauce, i have a great recipe for sauce thats easy if you need one). cook the pasta el dente (just a little underdone, should have a "bite" to it )and cook/warm the sauce as well.
Get about a baking dish (depending on how much you wanna make) and layer the bottom with sauce. then layer the sauce with ravioli, more sauce then the cheese. repeat til ya finish the ravioli and bake for about 25 min 350 degrees. its delicious, easy and tastes just like lasangna!

This is a simple, easy dish my husband showed me when we first got married..it is the only thing he knows how to cook with the exception of eggs or fried fish..LOL
Slice up some smoked sausage and a cup of onions diced...put a little oil in skillet and brown meat and onions ...add a large can of pork and beans, juice and all....cook over low heat until the beans cook way down and glaze over a little....
Serve with cornbread or toasted french bread..

Tomato Macaroni Cheese.. a twist on regular mac cheese, this is my absolute favourite. My Mum would always make this on Friday nights. I love it...

I don't know what kind of food your looking for...sweet, savory, spicy...etc....but here are a few recipes i love for every occasion!
Ok this is by no means healthy..but if your looking for some of the best comfort food you'll ever make/eat...Here it is!
-Baked Macaroni and Cheese
(8 ounce) package macaroni
4 tablespoons butter
4 tablespoons flour
1 cup milk
1 cup cream
1/2 teaspoon salt
fresh ground black pepper, to taste
2 cups good quality shredded cheddar cheese
1/2 cup buttered breadcrumbs
Preheat oven to 400°F.
Cook and drain macaroni according to package directions; set aside.
In a large saucepan melt butter.
Add flour mixed with salt and pepper, using a whisk to stir until well blended.
Pour milk and cream in gradually; stirring constantly.
Bring to boiling point and boil 2 minutes (stirring constantly).
Reduce heat and cook (stirring constantly) 10 minutes.
Add shredded cheddar little by little and simmer an additional 5 minutes, or until cheese melts.
Turn off flame.
Add macaroni to the saucepan and toss to coat with the cheese sauce.
Transfer macaroni to a buttered baking dish.
Sprinkle with breadcrumbs.
Bake 20 minutes until the top is golden brown
And one of my personal favorites-Pesto Tortellini
1 cup fresh parsley leaves, remove stems
1/4 cup pine nuts
2 garlic cloves
2 teaspoons dried basil
1 teaspoon salt
2/3 cup olive oil
1/2 cup grated parmesan cheese
1 lb cheese tortellini
Chop parsley in a blender or food processor.
With motor still running, add pine nuts, garlic cloves, basil and salt.
Continue processing until garlic is finely chopped.
Slowly drizzle in olive oil.
Then stop machine and fold in parmesan cheese.
Cook tortellini according to package directions.
Drain and toss with sauce.
Serve as an appetizer at room temperature with toothpicks.
Or serve chilled as a salad.
Can also serve warm as a pasta dish.
And vegetable barley soup-
3/4 cup pearl barley
11 cups vegetable stock (see recipe for Vegetable Stock #54127)
2 tablespoons canola oil or olive oil
1 1/2 cups chopped onions
1 cup chopped carrots
1/2 cup chopped celery
1 cup thinly sliced mushrooms
salt
1/2 bunch fresh parsley
In a saucepan, combine the barley and 3 cups of vegetable stock.
Bring to a boil over medium heat, cover, and simmer for 1 hour, or until the liquid is absorbed.
Meanwhile, heat the olive oil in a large pot and add the onion, carrots, celery, and mushrooms.
Cover and cook the vegetables for about 5 minutes, until they begin to soften.
Add the remaining vegetable stock and simmer 30 minutes, covered.
Add the barley and simmer 5 minutes more.
Add salt to taste and ladle into bowls.
Serve garnished with chopped fresh parsley.
