It is tomato bruschetta....and in Italy, you cut a loaf of crusty Italian bread into slices. Lay them all flat on a cookie sheet...using a pastry brush, brush all slices with a good olive oil, then spread pesto, sliced sweet tomatoes (preferably Italian plum) and shredded mozzarella...in that order. Place under broiler and watch carefully...take out when mozzarella is bubbly.

Start with a really nice French baguette, lightly toast it in the oven at about 350 degrees for three or four minutes, a teaspoon of of pesto, a sprinkle of mozzarella, a slice of a roma tomatoe, heat until cheese is melted. Remove from oven and place an arugula leaf on each tomatoe. Very Yummy!
