I work at a high end bakery and the ganache is left out for up to a week. Never harmed anyone and so much easier reheating when at room temp. It is on the firmer side, so the recipe itself having more chocolate than cream has something to do with the keeping qualities

Yes, Alton Brown (Good Eats) did a whole episode on chocolate ganache. "Art of Darkness III" on foodtv. You can find his recipe for ganache frosting on foodtv.com

No need to freeze it..............fridge is fine for up to a week, and remove it from the fridge and hour BEFORE you intend to use it so that it has sufficient time to temper to room temperature, working with chocolate can be really tricky, if you don't know what you're doing, you can easily scortch it or if you try and reheat it too quickly, it could go either of two ways, either it will "seize up" or it will separate, and you'll just have a chocolate mess on your hands..........Good luck, and Enjoy!!!

Yep, just be gentle heating it back up or let it come to room temperature on its own. It may loose some of its sheen though.
