I'm installing a Bruce 3/4" X 3-1/4" solid hardwood plank floor. My floor is engineered trusses 16" o.c. with 3/4" tongue and groove plywood subfloor. Can I install the hardwood parallel with the joists? What problems can I expect?

If the sub-floor was laid over the trusses at right angels to the them, there shouldn't be an issue.

Will you be laying foam sheeting or paper under the planking so as to avoid small wear fractures at the tongue and groove joins over time? (Also the paper makes installation that much easier.)

Yes.
The manufacturer's warranty will recommend a 1" subfloor when going parallel, 3/4" perpendicular, but its not an issue. As long as you have 3/4" T&G you'll be fine. PL Premium adhesive works well for putting in the few finishing pieces in the corners at the very end. Its cheaper to buy the installed pneumatic floor nailer than it is to rent it. I've used the stapler style, works quite well for the prefinished material. Make sure your floor is clean and VERY level. Any humps and bumps telegraph to the slats and they will open up, so sand them down to get a good flat surface.

Have fun. Make sure you allow alot of time...a good installer can do between 300-400 sq. ft. in a 10hr day.
