maybe a box of Tuna Helper??? :) That's probably not what you wanted to hear, but would be the easiest! Then you could serve the new potatoes as a side, with butter and parsley, maybe a bit of garlic.
OR, you could make tuna melts, which involves getting English muffins and your favorite type of sliced cheese (swiss works really well, or even cheddar) Mash up the tuna with a fork, add in a bit of mayo if you'd like, spoon it onto an open-faced half of english muffin, spread out mostly flat, and top with a slice of cheese. Broil briefly until warm through and cheese starts to slightly brown and bubble just a little. Can do in oven or toaster oven. easy and quick! Again, potatoes would go on the side

quarter & boil the new potatoes in salted water; drain & cool. blanch some fresh green beans in salted water (for 2-3 minutes) and remove to an ice water bath to stop the cooking process. chop 2 ribs celery, 1/2 cup black pitted olives (nicoise or kalamata olives are best), one shallot (or small yellow onion). in a small bowl, combine the juice of a lemon, salt & pepper to taste, and some fresh or dried thyme leaves with a tablespoon of dijon mustard and 1/4 cup extra virgin olive oil. whisk until completely blended. place all salad ingredients into a bowl, except tuna, and toss. drain tuna & fold into salad, trying not to shred up the tuna too much. serve over lettuce leaves. (salad nicoise)

Mayo and pickle relish. Hardboiled eggs are good in it. Chunked up apple is good in it too. My wife makes tuna salad with mayo, mushrooms, red onions, and onion salt then broiles it on bread with some cheese for a fantastic tuna melt.

In a blender, mix tuna, olive oil (3 tablespoons), some stoned black olives, beans, garlic, and pepper.
It's a great dip and also a yummy dressing for salads, boiled potatoes and steamed vegetables.

Tuna's fantastic with lemon juice, black pepper, mayo, and the most important ingredient - capers. Mixed together, served on lettuce leaves, with your little potato's. Fabulous. Bon appetite!
