that is traditionally found in Thai dishes. I especially savor the peanut sauce that they use on the salads. Yummy, I am getting hungry for it NOW!

AUTHENTIC THAI'S PEANUT SAUCE

4 teaspoons corn oil,
1/2 cup minced red onion,
2 tablespoons minced garlic,
1/2 teaspoon hot chili pepper
2 tablespoons sugar
2 tablespoons vinegar,
1/3 cup peanut butter,
1 cup of water

In a blender, combine corn oil, onion, garlic and hot chili pepper; blend for 1 minute
Empty the mixture into a saucepan and place over low heat until the mixture starts releasing aroma. Add peanut butter and mix well over low heat.

Add water and let it simmer for 10 minutes or until thickened.

Stir in vinegar and sugar; continue to simmer for another 1-2 minutes. Taste and add more vinegar and sugar if the mixture does not have the sour and sweet taste.

Place sauce in a shallow plate for satay dipping or pour over fresh salad.

From personal experience...I highly reccomend you use this one!! ITS SO GOOD. Here is the recipe and directions-
1 cup creamy peanut butter, not old fashioned style or freshly ground
1 (14 ounce) can chicken broth
1/4 cup fresh lime juice
3 tablespoons brown sugar
7 teaspoons soy sauce
2 tablespoons peeled fresh ginger
1/2 teaspoon crushed red pepper flakes

Place peanut butter in heavy medium saucepan.
Slowly add chicken broth, then all other ingredients.
Stir over medium heat until smooth and thick, about 6 minutes.
Can be stored in refrigerator 3 days until ready to use.
Reheat before serving.

Simple Hot Peanut Sauce
* 1/2-1 cup of peanuts, fried
* 3-4 chili (as desired); a little of tamarind
* salt and sugar to taste; 1-2 lime leaves
* 100 ml hot boiled water
* 1 tsp of fried garlic

- Grind all dry ingredients as one, when it becomes soften and smooth, add a little bit of water and grind again untul everything mixed well


Peanut Sauce using peanut butter
Sauce ingredients:
1 tsp. oil
¼ cup sliced green onions
½ tsp. ground ginger
¼ to ½ tsp. red pepper flakes
½ cup peanut butter
1 cup water
1 tbsp. soy sauce

make the peanut sauce by heating 1 teaspoon oil
over medium heat; add green onions and red pepper flakes. Cook 1 minute.


Stirring constantly, add peanut butter to green onion and pepper mixture.
Gradually stir in water and soy sauce until well blended. Add ginger. Bring to a
boil until mixture thickens. Serve hot or at room temperature with chicken
kabobs. Makes 1 ½ cups of sauce.

Mix a few tablespoon of peanut butter with some Hunan sauce found in stores, that is what i do.

Buy some peanuts and chop them to sprinkle on top of your dish with some shallots( chives).
