I love potatoes...color makes no difference to me...here is a recipe you might like....YOu can of course, use real mashed potatoes instead of the instant--I use only Idaho Spuds, if I use instant ones...they are in a brown box.

INGREDIENTS
1 cup instant mashed potato flakes
1 cup hot water
1 teaspoon salt
2 eggs
3/4 cup all-purpose flour

DIRECTIONS
In a mixing bowl, mix together potato flakes, water and salt. Allow the mixture to cool for 10 minutes. Stir in the eggs and flour.
On a lightly floured surface, knead the dough until no longer sticky.
Bring a large saucepan of water to a boil. Separate the dough into approximately 6 dumplings. Carefully drop the dumplings into water and boil approximately 20 minutes until they rise to the top. Remove from water and drain.

These do good with any roast with gravy served over them. You can also use a spaghettii sauce or just brown in a little butter and roll in bread crumbs as a side dish.

Red are my favorite as they are sweeter. Make some "Bum" soup. For one person, peel about 3 large puds, dice into about 1/2" squares and boil in water with salt, pepper, and some chopped onion. Hard boil 2 eggs in the mean time and cool under cold water. When the puds are done cooking, peel the eggs, slice into pieces and drop into the soup. Boil another 5 mintes and your done. Inexpensive and tastey.

I prefer white potatoes, but only Maris Piper. They make fabulous chips and roast potatoes, great for mash only if you steam them. Best all rounder potatoe in my opinion.
Have you ever thought about mashing potatoes and adding lashings of cheese. Or Slice raw potatoes in ovenproof dish, add layer of onions, layer of cheese, then repeat. Cover with milk and cook in oven.

I like sweet potatoes.
Slice 3-4 in big spears, along with 2 sliced onions.
Place in a 9 x 13 dish.
Liberally sprinkle with olive oil and mix with your fingers.
Sprinkle with salt, pepper and garlic powder and mix again.
Cover with foil and bake at 425 about 25 minutes
Remove foil and gently stir or flip with a spatula
Leave under covered and cook til done and lightly brown

You can roast any colour potato or type you have. Some like flowery roast potatoes, others like the waxy one. You will find both types in each colour.
