Apart from/ except/ bar/ with the exception of.../unless.

Toute la classe est sympathique sauf Caroline.
The whole class is nice apart from Caroline.

J'aime les chocolats sauf ceux qui sont blancs.
I like chocolates, bar the white ones.

Je veux travailler au jardin, sauf que je dois sortir ce matin.
I want to work in the garden except that I have to go out this morning.

Je reste ici sauf si tu viens avec moi.
I am staying here unless you come with me.

sauf = except
J'aime les voitures sauf les mercedes
I like cars except mercedes

sauf que = except that
Je veux sortir sauf que je suis fatiguée
I want to go ou except that I'm tired

sauf is generally translated by "except", sometimes can be "besides" especially when it starts a sentence.
