Meatloaf Patties, Smashed Potatoes, and Pan Gravy
1 1/3 pounds ground sirloin, 90 percent lean ground beef
1 slice white bread, spread with softened butter, then cut into small cubes
1/8 cup (a splash) milk
1 egg
2 teaspoons grill seasoning blend, or coarse salt and black pepper combined
1/2 teaspoon ground allspice
1 rounded tablespoon tomato paste
1 medium onion, finely chopped, reserve 1/4 amount
2 pounds small red potatoes
2 tablespoons butter
2 tablespoons sour cream
2 scallions, chopped, whites and greens
1/2 cup milk
3-Condiment Pan Gravy:
2 tablespoons butter
1/4 medium onion, finely chopped, reserved from meatloaf mixture
2 tablespoons (a handful) all-purpose flour
1 to 1 1/2 cups beef stock
1 tablespoon ketchup
1 rounded teaspoon spicy brown mustard
1 tablespoon steak sauce

Dressed Tossed Salad
Place meat in a large mixing bowl and create a well in the center of the meat. Fill the well with the bread cubes and dampen them with a splash of milk. Pour 1 beaten egg over bread and add seasoning or salt and pepper, allspice, tomato paste and onion to the bowl.
Combine the meat, bread and grill seasoning or salt and pepper and form mixture into 4 large oval patties 3/4-inch thick. Pan fry meatloaf patties in a nonstick skillet over medium high heat 7 minutes on each side under a loose tin foil tent. The tent will reflect heat and allow the steam to escape the pan.
Cover the quartered, red-skinned potatoes in water in a medium saucepan. Bring water to a boil and cook potatoes 10 minutes or until fork tender. Turn heat under pan off; drain potatoes and return to hot pan and warm stovetop to dry potatoes out. Add butter, sour cream, scallions, and milk to potatoes and smash to your desired consistency. Season potatoes with salt, to taste.
Remove meat loaf patties to a platter and return pan to heat. Reduce heat to medium and add butter and onion to your skillet. Cook the onion 2 minutes and sprinkle pan with flour. Cook flour 1 minute and whisk in 1 cup beef stock. Bring broth to a bubble. If gravy is too thick, thin with additional stock. Stir in condiments and remove gravy from heat.
Slice meatloaf patties and drizzle with gravy. Pile smashed potatoes along side and make a well in the center for sour cream or gravy. Serve meatloaf and smashed potatoes with baby carrots, or with a tossed salad dressed with oil and vinegar.
Baby Carrots
1 1/2 pounds baby carrots
3 tablespoons butter, cut into small pats
1 tablespoon sugar
1 teaspoon coarse salt
Place baby carrots in 1/2-inch of water with butter, sugar, and salt. Bring water to a boil, cover pan, and reduce heat to simmer. Cook carrots 7 or 8 minutes, remove lid, and raise heat to medium high. Reduce water until it almost evaporates, a couple of minutes. Turn carrots in sauce and taste to adjust seasonings and serve.

allrecipies.com is a great place to go for dinner ideas, whether quick and easy or gourmet. They've got menus, too. Sorry to sound like an add here, but it doesn't cost anything and that is the only website that I've had luck with. Many people rate and make comments on the recipies, too, so you generally know if you'll have luck or not. There are tons of ideas, and the only problem I have is so many look so great, I have a hard time choosing among them.
By the way, if you're going for easy, but gourmet and yet kid friendly, I always like to start with a cold soup (it's not enough for a full meal, but it's enough to make it fun)---like a strawberry soup! It can be really easy---just blend strawberries, sugar, and cream (or half and half) in a blender and you're done (you can add a bit of sour cream, too). If you want to add to that, you can get a store pound cake and make "crutons" out of it by cuting it into squares and drying it out in the oven on a low temperature (250 or such). After this, no matter what you have, your kids will love the meal. Another cold soup is mango (I use two for every four people), 1 lemon (juice and zest), sugar (1/2 c. ish), and half and half (1 1/2 c. ish). Similar to make, but different to cook. I wouldn't use the crutons with this one, though. These are some recipies I've gotten from the allrecipies.com (i've memorized them and don't use exact measurements any more, though---if you want the exact, you can go to allrecipes.com and search for strawberry soup or for cold soup) and I've really loved it since and use it every now and then when I want something fresh and fun.

my kids love this simple dish! its easy to cook and tastes just as good!
Cream pasta and peas
This recipe comes from Leonard B. He's not sure where it originated, but it's a dream.
3/4 lb of dried, store bought campanelle
1/4 lb fresh shelled peas or a 10 oz package of frozen tiny peas, thawed
4 tablespoons (1/2 stick) butter
1 medium yellow onion, finely chopped
4 oz prosciutto, cut into thin strips from a 1/4 inch thick slice
salt and freshly ground black pepper
1 cup heavy cream
1/2 cup freshly grated parmigiano-reggiano cheese
If using fresh peas, cook them in boiling, salted water, until tender. If using frozen peas, thaw them. Drain and set aside.
Pour 4 quarts of water into a large saucepan or pot and place over high heat.
Melt the butter in a large skillet over a medium-low heat. Add the onion and cook until it has softened and turned a rich golden color. Add the prosciutto and continue cooking, stirring, until it has lost its raw color: 1-2 minutes.
Raise the heat to medium-high and add the cooked fresh peas or the thawed frozen ones. Season lightly with salt and black pepper (remembering that the prosciutto is already salty) and cook, stirring occasionally, for 2-3 minutes.
Pour in the cream and cook, stirring frequently, until it has reduced by half. Remove the skillet from the heat and set aside.
When the water for the pasta is boiling, and the sauce is off the heat, add 1 tablespoon of salt to the boiling water and drop in the pasta all at once, stirring well.
When the pasta is cooked al dente, drain it and toss it with the sauce, adding the grated cheese. Taste for salt and serve at once.

Have a "special" meal. Get together all sorts of things that your kids like. For example, cut up apples, slices of bologne, grapes, crackers, cheese, carrot sticks, celery. Just whatever you can think of that your kids like and that you have in your house. Put each thing into a bowl and voila, dinner is served. It certainly isnt an everyday dinner, but the kids will love it.

You know, this sound disgusting, but my kids love it. Take flour tortillas and put a hot dog and some cheese in it (roll it up). Cover the pan with a big can of chili, and put more cheese on top of this. Bake at 350 until bubbly.

My kids used to love these:
In muffin pans line the outside of each partition with seasoned ground meat and bake until browned. Drain, then fill the centers with mashed potatoes and top with cheese. Run them back in the oven just to melt the cheese. Serve with vegetables.
(Sometimes I would put chopped green onion in the potatoes for color)

Cut up a package of hot dogs into about 1 inch pieces. Add this to two cans of baked beans and heat, adding ketchup, worcestershire sauce, mustard and brown sugar to taste.
My mom used to set up a salad bar with different veggies, cut up meats and cheese and rolls.

Southern version of "Pigs in Blanket"...
Hot dogs, split down but not all the way through
Insert pieces of cheese (your favorite...any will work)
Wrap in Crescent Rolls and bake...
Serve with chips and a pickle spear, with mustard on the side..
Kids can help, it's fast, cheap and easy!

For kids you could make mac and cheese with cut up hot dogs and a veggie everything tastes good with cheese :-D
You could make cut up carrots with ranch dressing, fruit cocktail with peaches,pears and cherries.
Toast with cinnamon and butter..
pancakes with scrambled eggs
waffles and bacon... I love breakfast for dinner!!
