Strawberry Dessert Sauce

1 pint fresh strawberries, thawed or 2 cups frozen unsweetened strawberries, thawed
3 tablespoons sugar
1 tablespoon cornstarch
1/4 cup water
1 tablespoon lemon juice

Mash strawberries; set aside. In a saucepan, combine the sugar, cornstarch and water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in strawberries; remove from the heat. Stir in lemon juice. Transfer to a small bowl. Cover and refrigerate until chilled.

Sauteed Strawberry Dessert Topping

3 tablespoons butter
1/4 cup coarsely chopped walnuts
3 tablespoons dark brown sugar
2 cups large strawberries, quartered
3 tablespoons grated semisweet chocolate
1/4 cup crumbled toffee lace cookies

Melt butter in a medium skillet.
When bubbly add walnuts, cook stirring until they just begin to color.
Add brown sugar, stir and cook 25 seconds.
Remove from heat, add strawberries and chocolate.
Quickly stir to melt chocolate and coat the berries.
Spoon over your choice of dessert and sprinkle with cookie crumbs

Fresh Strawberry Sauce
Serves 4 to 6.

This sauce is delicious on ice cream, and it's great on bread pudding, pound cake, cheesecake, or slices of angel food cake.

INGREDIENTS:
16 ounces fresh strawberries
1/2 cup granulated sugar
1/4 cup water or orange juice
juice and finely grated zest of 1/2 lemon
2 tablespoons butter

PREPARATION:
Hull and slice the strawberries; rinse well and drain.

In a saucepan, combine sugar, water, and lemon juice. Bring to a light boil. Add lemon zest, and strawberries. Heat through and then stir in the butter.

Remove from heat and let cool. Chill for serving over ice cream or desserts.

this is my favorite-
1 pint strawberries, cleaned and stemmed
1/3 cup white sugar
1 teaspoon vanilla
DIRECTIONS
Cut about 1/3 of the strawberries in half. In a saucepan over medium high heat, combine strawberries, sugar and vanilla. Cook, stirring occasionally, until sauce thickens, about 5 minutes. Remove from heat. In a blender, puree about 1/3 of sauce, then mix back into remainder. Store in refrigerator.

If you don't want one that is as over-sweet and fattening as the commercial ones then here is an idea.

Defrost a package of those frozen strawberries, bulk packed without added sugar. Just give them a quick rough chop with the blender (so they are still recognizable as strawberries not made into a puree). Swirl in a teaspoon of liqueur (like Cointreau) if you wish for an adult treat.

Then just spoon it cold over the ice cream. You will eliminate half the calories and carbs that way and it still tastes great.

Hull and quarter about 3/4 pound strawberries to make 2 cups. In food processor or blender, combine strawberries, 1/3 cup sugar, 1 tablespoon black, currant-flavored liqueur (optional), and 2 teaspoons lemon juice. Whirl or process until pureed. If made ahead, cover and chill up to 4 hours. Makes 1 1/4 cups.

I use frozen sweetend strawberries in mine. I don't heat it up, just mash the strawberries a bit and add a little powdered sugar if they aren't as sweet as I'd like. Yum!

mayb you could have pink sprinkles instead of chocolate/rainbow since the baby is a girl, i like brownies with my ice cream its something simple just make a box of store bought brownie mix and then cut them into small bite size pieces, carmel sauce, whip cream if you made your own (also simple to make just heavy cream powdered sugar and a little vanilla extract) you could add a little bit a food color for pink whip cream.....hope i helped :)
