Jumbo eggs are laid by older hens. I buy jumbo eggs and get double yolks about 3 in 12. The really large eggs are deleted from transport because they break easily. They can be sold locally to bakeries. I have seen eggs with 7 yolks, working at an egg ranch.
At the flea market he does not have to worry about commercial transportation, so can bring in the big ones. Also, you can candle them(look through the shell with a light to check quality) and see double yolks. The process used to be done with a candle. No hormones.

Double yolks are only uncommon in the commercial market, they are separated out at the prosesing plant. Your flea market eggs are farm raised go ahead and get some my kids loved sunny side up eggs and thought it a special treat when they had double yolks.

Double yoked eggs are not used in the grocery market. Laying houses, with thousands of hens, which are well fed, produce a certain amount of double yoked eggs every day. Usually, these are separated and sold at a cheaper price to whoever wants them. I have purchased some from a local company several times. They are still fairly uncommon, but when you multiply the possibility by thousands of hens, you still end up with a lot of doubles.

I don't really know, but you might also have some very fertile chickens! Why not ask the vendor when you go there? Or look it up online. With cholesterol concerns, I'm thinking that the double yolks might not be the preferred egg to purchase!

maximum supermarkets now sell packing boxes of double yolk eggs . i purchase them from Tesco . whether the final eggs we ever had have been some years in the past whilst my mum used to get eggs from an area farm . They definitely had a diverse flavor and each and all of the hens ran loose on the farmyard
