The steam creates a higher humidity environment in the sauna. The sauna is usually lined with a specific type of wood that resists absorbing the moisture. Any excess moisture usually escapes into the air outside the sauna through the small leaks in the sauna's enclosure.

Well I have seen water dripping from the ceiling. However since the sauna is much warmer than the air outside the sauna pressure is higher. PV=NRT and all. So there is general exhaust through all of the cracks. Otherwise the sauna would explode like a can in a fire.

In a typical sauna water is poured into hot stones. This turns the water into gas (hydrogen and oxygen). This gas is lost through escaping out the door, being breathed in my us or absorbed by our skin and clothes.

The wood doesn't get damp as it too warm.
