I am making a recipe called Brasola al Barolo and it calls for red wine. I have a few bottles of opened wine which are probably a week past the drinking stage ( a bit stale). Can I still cook with them? How much will it impact the taste?

It should be ok to use at that age. You will cook most of the alcohol that's left out, but it will still taste pretty darn good.

If you wouldn't want to drink it (presumably because the taste is off) why would you want to use it as a flavoring agent for your food? You have to taste the wine and determine what the "off" flavor is and if it will be acceptable with the rest of the ingredients. Personally, I would stick the crowbar in the old wallet and drop $10.00 on a decent bottle of wine - I'd cook with some of it and enjoy the rest while eating the meal (which sounds delicious)

If your wine has been capped and stored in the fridge it should be totally fine for cooking.
I've read it's ok once opened for about a month if refridgeratred. The only difference will be a slightly more acidic taste due to oxidisation.

Next time to save yourself the worry, just put it into icecubes trays and freeze till you need it.

Kembek, what a brilliant idea. If I liked microwave meals and takeaway I'd do the same but, unfortunately (or is it fortunately) I like home cooked food. I do clean up as I go along. I wish I could say the same for the 'man of the house'. Not that he cooks very often but what a mess he makes when he does. I've found a wonderful solution though - I leave it there (for 48 hours if necessary) until he DOES do it. I am no man's slave. If HE cleaned up when I cooked then I'd clean up when HE cooks but that has never been the case so fairs fair i.m.o. Start a job, finish it also.

Yes, old wine is perfectally good to cook with. The alcohol burns off in the cooking process anyway, it's the flavour you want and it should still exsist. A closed bottle is good as well as long as it hasn't gone to vinegar, taste that one first.

Rule of thumb is...

If you don't want to drink it, you don't want to cook with it. And god forbid, never ever ever cook with "cooking wine". In order to sell "cooking wine" in the US, they are required to add salt, and other off flavorings to discourage drinking it.
