I am cooking a dish and I really don't want to get out in the cold weather. What is a substitute for a roasting pan.

I don't have a good roasting pan or a crock pot, but I still can and do make some delicious roasts. If you have a deep dish pan with a cover that can withstand temeperatures up to 350, you can use that in your oven. I set my temp at 300 and cook everything slower and longer, comes out great, meat is tender and flavorful. One pan I have has plastic handles that can withstand up to 350 (I never set it this high just to be safe), another pan I have I take the plastic handles off before putting it in the oven. If you have pan that will work but not a cover, put aluminum foil over it (assuming you or a neighbor has that around).

Do you have a crock pot? If you do, you can use that.
