I have a funny story to go with this recipe...
Back when my parents were young parents and things in the feminine nature were kept confidential and secretely kept to the immediate couple. My Dad was working an hour away and would alway call mom on his way home to see if she needed something from the little country store in route to the homestead. She said yes pick me up some special K. He did just that! But it wasn't that time of the month and she really needed it for special K bars! Kinda cute, anyhow...
Special K Bars
1 cup sugar
1 cup white corn syrup
1 1/2 cup peanut butter
6 cups Special K cereal
2/3 cup butterscotch and chocolate chips, combined

Cook sugar and syrup over medium heat, stirring until mixture comes to a boil. Remove from heat and stir in peanut butter. Stir in cereal and press in a buttered jelly roll pan (11x15). Press firmly until smooth. Melt chips and spread over the top and cool.

SPECIAL K BARS

1 c. white syrup
1 c. sugar
1/2 tsp. salt
1 tsp. vanilla
1 1/2 c. peanut butter
7 c. Special K cereal

Heat syrup and sugar in pan over medium heat, stirring, until sugar is melted. Do not boil, or bars will be too hard to cut. Remove from heat, and add salt, vanilla and peanut butter. Stir well, and add the cereal. Press into a buttered jelly roll pan.
For frosting, melt 1 1/2 cups chocolate chips and 1 1/2 cups butterscotch chips together and spread on top. Let set before cutting. Makes about 4 dozen, depending on size.

Special K Bars:

Excellent and easy to make.

Ingredients
1 1/3 cup Sugar
1 cup White Karo Syrup
1/3 cup Peanut Butter or more (1/2 cup)
7 cups Corn flakes or special K Cereal
FROSTING:
1 cup Milk choc chipa
1/3 cup Peanut Butter

Preparation

Microwave sugar and syrup on high for 2 minutes.

Add Peanut butter and cook 2 more minutes.

Pour over cereal.

In saparate bowl melt chocolate chips and peanut butter. Pour over the cereal mixture right away.

1 cup brown sugar
1/2 cup sugar
1-1/2 cups corn syrup
1-1/2 cups peanut butter
6 cups Special K crisp rice cereal (NOT Rice Krispies!!)
12 oz. pkg. semisweet chocolate chips
1/3 cup peanut butter
PREPARATION:
In large microwave safe bowl, combine sugars and corn syrup and mix well. Microwave on high for 3 minutes. Remove bowl from microwave and stir mixture, scraping down sides of bowl. Return to microwave and microwave on high for another 1 minute.
Remove from microwave and add 1-1/2 cups peanut butter. Stir until mixture is smooth and combined. Add cereal and stir to coat. Pour and press into greased 13x9" pan, using back of greased spoon to press evenly.

Combine chocolate chips and 1/3 cup peanut butter in small microwave safe bowl. Heat on medium power for 2 minutes; remove and stir. Return to microwave for another 30 seconds if necessary to melt chips. Stir until smooth, then spread over cereal mixture. Let cool completely, then cut into bars. Store, covered, at room temperature. Makes 36

You can also make this on the stovetop; combine ingredients as recipe specifies, except cook over medium heat in heavy saucepans

these are the BEST! enjoy.

1 cup light corn syrup
1 cup sugar
1 cup peanut butter
7 cups Rice Krispies or Special K cereal
1 cup chocolate chips
1 cup butterscotch chips

melt together corn syrup and sugar.
turn off heat and add P-nut butter.
stir in cereal.
dump in lightly greased 9x13 in.
pan, pressing lightly with buttered fingers or wax paper.
melt together chocolate chips, buttterscotch chips, in microwave until completely melted.
Spread over bars and allow to cool.
