I'm going to a potluck tomorrow and the main dish is feta chicken. What would go well with that that wouldn't be too difficult to make? I don't do much cooking :)

Greek Risotto with Fresh Spinach and Feta

1/4 cup olive oil
1 large yellow onion, minced
4 scallions, minced
2 garlic cloves, minced
1 cup long-grain rice
Salt, freshly ground black pepper, to taste
1 pound fresh spinach, trimmed, washed, and finely chopped
1 - 1 1/2 cups of water
1 cup chopped fresh dill
Strained fresh juice of 1 lemon
1-2 tablespoons red-wine vinegar
1/3 cup feta, crumbled

Heat 2 tablespoons olive oil in a large skillet and saute the onions, scallions, and garlic. Add rice and saute, stirring, for 3-4 minutes. Season with salt and pepper.

Add the spinach in batches until it is wilted. It will decrease tremendously in volume. Stir to combine thoroughly with the rice. Add 1 to 1 1/2 cups of water, cover the pot, and cook the spinach and rice until very tender, about 45 minutes. Add more water during cooking if necessary. Ten minutes before removing from heat, toss in dill. Season with lemon juice and vinegar just before removing from heat. Serve in a bowl or on a platter, pour on remaining oil, and sprinkle with the crumbled feta.


Orzo with Zucchini, Eggplant and Feta
1/4-cup olive oil
3-shallots, chopped
2-large sprigs fresh thyme
3-cups chicken stock (2 cans of Campbell's chicken broth + 1/2 can of water)
Pepper, to taste
Diced tomatoes to garnish
2-baby eggplants, diced
2-large cloves garlic, chopped
1-tsp dried Oregano
1-large zucchini, diced
Salt, to taste
3oz. crumbly Feta cheese
2-cups orzo

In a medium pot, heat half of the olive oil on high
Sauté the eggplant, tossing vigorously until golden, about 5 minutes
Add remaining oil, shallots, and garlic and sauté on medium heat for about 3 minutes, or until the shallots are soft
Add thyme, oregano, and the chicken stock and stir
Cover and simmer on medium heat for about 6 minutes
Add orzo and zucchini, stir and reduce heat to a simmer, covered
Cook for 12 minutes, stirring occasionally
If after 8 minutes of cooking, the liquid has absorbed, but the orzo isn't cooked yet, add 1/2-cup of water and continue cooking until orzo is done
Remove from heat
Sprinkle with Feta cheese and tomatoes just before serving


Spicy Stuffed Peppers with Feta

18-20 bull's horn peppers
1 1/3 pounds of feta cheese
3 tablespoons of olive oil
4 heaping tablespoons of finely chopped parsley
2 small hot peppers (of your choice), finely chopped
1/2 teaspoon of salt
1/2 teaspoon of pepper

Preheat oven to 390F (200C).

Cut a cap off the tops of peppers, and scoop out seeds, taking care not to break or tear the pepper. In a bowl, mash the feta with a fork until creamy. Add oil, parsley, hot peppers, salt, and pepper and mix until very well combined.

Using a small spoon, stuff the cheese mixture into the peppers (pressing down with the handle of the spoon to completely fill) to 1/2 inch from the top.
Press a small piece of bread into the pepper to keep the cheese filling from melting out during cooking. Place the caps back on each pepper.
Lay the peppers in an lightly greased or nonstick baking pan and roast for 20 minutes or until they soften in a 390F (200C) preheated oven.


Roasted Summer Vegetables

INGREDIENTS:
1 large eggplant, halved lengthwise then cut into 1/4 inch slices
2 medium zucchini or yellow squash, halved lengthwise then cut into 1/2 inch slices
2 medium potatoes, peeled and sliced 1/8 inch thick
4 medium tomatoes, 2 cut into large chunks, 2 grated
1 large onion, halved lengthwise then thinly sliced
2 artichokes, quartered, trimmed and par-boiled (optional)
3-4 cloves of garlic, minced
1 cup of water or stock
1/2 cup of olive oil
2 tablespoons of ground cumin
3 tablespoons of dried oregano
black pepper to taste
cayenne pepper to taste
salt to taste
1 bunch fresh parsley, chopped (reserve ½ cup for garnish)
PREPARATION:
Pre-heat oven to 350F (175C).

Place all ingredients in a heavy, shallow baking pan, toss together and bake until tender (about 1 hour), shaking pan occasionally. Resist the temptation to stir the vegetables, as they will turn to mush.

We have served this following recipe at parties before as a side dish to Feta chicken! it is SO SO SO good. I don't know if it is as simple a dish as you were hoping but the taste is worth the work! A time saving tip, use Paul Newman's balsamic vinagrette instead of making your own dressing...just as good!

Cranberry Spinach Salad
1 tablespoon butter
3/4 cup almonds, blanched and slivered
1 pound spinach, rinsed and torn into bite-size pieces
1 cup dried cranberries
2 tablespoons toasted sesame seeds
1 tablespoon poppy seeds
1/2 cup white sugar
2 teaspoons minced onion
1/4 teaspoon paprika
1/4 cup white wine vinegar
1/4 cup cider vinegar
1/2 cup vegetable oil

In a medium saucepan, melt butter over medium heat. Cook and stir almonds in butter until lightly toasted. Remove from heat, and let cool.
In a large bowl, combine the spinach with the toasted almonds and cranberries.
In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, onion, paprika, white wine vinegar, cider vinegar, and vegetable oil. Toss with spinach just before serving.

A simple pasta -- penne, bowties, rotini, radiatore (not macaroni or noodles) -- can be served cold, tossed in olive oil, very small amount of salt and pepper, and with shredded parmesan, romano, or asiago cheese mixed in (not mozzarella). Fancy it up with sliced olives, Italian seasoning, chopped brocoli (small pieces), green onions, diced tomato, and/or chopped marinated artichoke hearts. Skip the olive oil and add pesto if you want (yummy). You can also chop up a small amount of an Italian meat to add, but then the vegetarians will be disappointed. Don't worry about following a recipe for the amounts, use your own good judgment and tastebuds, create, and have fun!

Rice -easy and filling and you can add to it to make it more "homemade"

Buy some Far East rice pilaf. When you are cooking it, throw in some pine nuts, diced onion and diced red and green pepper (and if you like them, cut up yellow raisins). It's easy and rice goes with chicken.

You could also buy some premade hummus and chips or stuffed grape leaves. (I'm not sure how good the canned ones are) but a lot of places have them fresh.

you could roast (or grill, if its warm enough where you are to light up the BBQ) some veggies tossed in extra virgin olive oil, lemon juice salt & pepper. add a little oregano or mint for a greek flair. good veggies for this are eggplant, zucchini, onions, potatoes, bell peppers, mushrooms. roast at 425f for about 30-40 minutes - arrange the cut veggies on a cookie sheet or jelly roll pan so that they are not touching and turn with a spatula at least once.

You can make a pizza and put feta chicken on as a topping.

Awesomely Easy Sesame Asparagus
Serves 4

INGREDIENTS
1 bunch fresh asparagus, trimmed
1 tablespoon olive oil
2 tablespoons black sesame seeds, lightly toasted
kosher salt to taste
DIRECTIONS
Fill a large saucepan with 1/2 inch of water and bring to a boil. Cook asparagus until tender-crisp, about 5 minutes. Drain, then rinse with cold water. Return pan to the stove over medium heat, pour in oil, and swirl around pan. Shake excess water off of the asparagus, and toss in oil with sesame seeds, and salt to reheat.
Tip

To toast sesame seeds, toss them in a heavy bottomed skillet over medium heat until they are fragrant.
