Hey, these are some of the possible reasons:
1. Increase in population causing increase in consumption
2. Industrialization- making a single car requires about 1000 gallons of portable water.
3. Availability leads to wastage
4. Overconsumption by various chemical industries-eg. Hydrogn making plants.
5. Overuse in mining operations-eg. Mining of Sulphur in the U.S.

1.people have better access to water thr' piping and distribution, then abuse it.
2. Industrialization of the world in the last century was phenomenal-this called for more use of water. This demand will go up exponentially in the foreseeable future
3.Wastage of water is a big unrealized problem. More water goes down the drain then necessary for a lot of household chores and factory. Most of the time people just let the water run, hence increased demand.

The biggest reason is simply more people. I'm not that old, and I remember very clearly when the Earth's population was about half what it is now. We're growing exponentially, and we need more water to support ourselves. Also, it takes more and more food to feed all of us, which means more irrigation.
