My mom makes the best sauteed spinach, but she is out of town ths weekend and I am craving me some spinach! I know she sometimes uses chopped mushrooms and olive oil in the pan while she is cooking the spinach, but I don't know when she adds it or anything. I just want a simple recipe that can get some good tasting spinach. Thanks a head of time!

SAUTEED SPINACH WITH MUSHROOMS

4 - 5 cloves garlic
3/4 c. olive oil
8 lg. mushrooms
2 pkgs. frozen spinach or equivalent in fresh
1 can cantolini beans or 1/2 c. chichi beans (peas)
Salt and pepper

Cut garlic into fingertip size pieces. Put in jar with olive oil, cover and let set for 2 days. Wash mushrooms and slice. Saute in garlic oil until golden brown. Chop frozen spinach, mix in with oil and mushrooms. Saute until spinach is tender. Add beans or peas. Heat until beans/peas are heated through. Shake on a bit of salt and pepper.

I love sauteeing spinach, I saw Miss Ray on the Food Network do this. SO EASY! Heat a pan with a little olive oil with a teaspoon of minced garlic. Add your washed , dry spinach, I use a whole bag ,it sure cooks down quick. After, I sprinkle a little nutmeg on top, YUMMOOO!

I love spinach. My personal favorite is to take walnut oil and a little minced garlic in a skillet and then add in the spinach. I toss it around while I'm cooking to make sure that it all wilts and gets mixed with the oil/garlic, then once it's the consistency I like I take it out and give it a squeeze of lemon and a little shake or grate of nutmeg and toss again.

You can easily replace the walnut oil with olive oil, I just like the taste of walnut oil.

simply sautee washed spinach in a combo of olive oil and unsalted butter, salt and pepper to taste with a very light dusting of nutmeg. enjoy!

I usually don't saute mine, but my absolute favorite is to throw it in a pan with a little Light Done Right Vinagrette (red wine, raspberry, basalmic, or even italian... pick your favorite). Then I crank the heat and throw a lid on until it is steamed through and wilts to the tenderness I prefer. After that, you can throw it on toast with some other veggies for a sandwich, or stick it in a wrap, or just eat it plain. Super easy and wonderful! Hope this helps!
