try chopping one med size onion 2 cloves of garlic i sweet pepper very finely, put into a pot with olive oil if no olive oil a good dollop of butter or marge. simmer until soft then add curry powder, let it simmer for about 1 min., then add a spoonful of flour make sure you are stirring ingredients from the beginning all the time add a 1/4 cup of water and stir till you get a thick paste all the time. if you like hot curry chop some chili peppers 2 0r 3 to your particular taste. skin chop into pieces if not already done and wash the chicken put salt and pepper on to season, put coconut milk into the pot and stir add chicken turn up the heat a little to stew not boil keep on turning ant intervals for about 3/4 to an hour until tender and cooked. cook rice and serve chicken on top of rice oh and more salt to taste while cooking depending on your taste or let people add their own at the table.

Serves 2

2 Chicken Breasts Chopped into Bite Size Pieces
1 Tin Coconut milk
4oz Thick Natural Yogurt
3 Egg Yolks
3 Tablespoons Mango chutney
Quarter of an onion finely chopped
2 Teaspoon Curry Powder
4 Cloves Crushed Garlic
2 inches Root Ginger grated
5 Tablespoons Vegetable Oil
1 Teaspoon Turmeric
1 teaspoon Garam Massalla
2 drops Almomd Extract (Not essence)
1 Tablespoon toasted almond slices


Method
Make a paste of the curry powder and Turmeric with a little water. Fry the onion until translucent in the veg oil then add the garlic and ginger and stir fry on medium until it just starts to brown. Add the curry paste and stir in and fry for a further 30 secs. Add the chicken pieces and seal well on all sides. Mix the coconut milk, yogurt, mango chutney and egg yolks in a jug and pour over and simmer for 20 minutes or until the chicken is cooked, stirring regularly. If needed add a little water to prevent the curry becoming too thick or dry. Now stir in the garam massalla and almond extract and cook for a further minute. Serve with the toasted almond slices sprinkled over the top.

Yum - I have Red Thai Curry with brown rice and fresh veg.

In answer to your question, you need in addition to coconut milk, chicken and rice :

onion, garlic, chillie, turmeric or curry spices, ginger, tomatoes, potatoes carrots, (latter 2 can be in curry or served separately),

serve more veg on side broccoli, cauliflower, spinach or other veg.

cold cucumber and yogurt.

You could even do some Naan bread too.

How do you make it - I would invest in a cook book or at least go get one from the library but briefly.

Fry onions, garlic, ginger until brown, add curry spices, keep stiring fry chick pieces to coat, add stock (water + ) add carrotts and potatoes rough chopped, tomatoes. Simmer until cooked about 45 mins. Add coconut milk toward end of cooking time, bring back to simmer and cook for about 10 mins

ooooohh you have some of the ingredients to make a tasty malaysian coconut curry! just get urself a jar of curry paste, mix it with the coocunut milk, add the chopped pieces of chicken, new potatoes, chopped aubergines, fresh coriander( and any other veggies u like) and cook it all together in a saucepauce until hot and half runny/half paste and pour on top of white rice! yummy....;)

Mix the coconut milk with a carton of tomato passata and throw in some chillis and you have a v. bog standard thai red curry that will taste delicious - just simmer the chicken in it.

But you might want to add some other tasties to it - lemon grass, corriander, lime, onion seeds, garlic, ginger........

fastest way would be to add some curry powder and lemon grass with all your other ingredients. If you like it a little sour, can add few tomatoes. Dont' forget to fry some garlic, ginger and onions before adding all your stuff into the pot.

Get a jar of thai green or red curry paste and make yourself a thai curry...

you wanna mix all these and make a curry???if thts the case,

fry some onions,finely chopped green chillies,soaked cashew nuts(a few of them..just soak them in water for 10 min till they get soft and tender..) ginger-garlic paste..fry these in oil till the smell of ginger-garlic disappears...add chicken pieces..(you can marinate these with chilli powder,turmeric,mint,criander and chilli paste..salt for about n hour) let these fry and simmer till they appear a bit soft..instead of water,use coconut milk..and let them boil..add the spices(preferably indian..bcoz this is indian way of cooking) and then let the pieces boil and fry them..till the moisture disappears..or they are soft and tender.

garnish with onion,cpriander etc...

this tastes really great..
